Broiled Grouper with Creamy Crab and Shrimp Sauce
The first time I made this, the guys loved it, but it was off for me. The second time I made it I added onions and diced garlic to the butter before adding the cream. It tasted better but a little off, so I added just a little bit of sugar to taste. We are from the deep south, so I added extra creole seasoning as well. I added the crab and shrimp after the heat was off to keep it from cooking to nothing. Delish.

Shrimp Kisses
Very good, i had had this before, and did not see how they kept the cheese in the bacon....after playing with the food for a little while, i precooked the bacon until slightly brown, but still rubbery, and left the bacon slice whole. I put a slice of pepper jack slightly thinner than the bacon directly on the bacon, then placed chopped jalapenos on chesse, and wrapped shrimp fully with the bacon slice. the extra wrapping kept the cheese in better.

Polly Welby's Excellent Chocolate Mousse
MMMMMM, very good and simple. simplified more by whipping cream in blender on puree.....same results. Took others advice and blended chocolate into whipped cream.
