Cream Puff Cake

Reviewed: Jun. 22, 2009
This was delicious. As suggested by another reviewer I put a layer of chocolate on the pastry before adding the pudding and it was perfect. I messed up and had to do a combination of vanilla pudding and banana creme pudding. (yummy mistake ) Took it to a potluck and it held up well on the table. Many compliments on it. Thanks for making me look good.

Feta and Roasted Red Pepper Dip

Reviewed: Apr. 3, 2009
I had all the ingredients on hand since we just had gyros for dinner the other night. Wish I would have had this with the dinner! I did cheat and used the jarred roasted peppers. I also added a little lemon juice for zing. This was fantastic. Thanks.

Mom's Island Treasures

Reviewed: Mar. 30, 2009
Gave it five stars because of all the compliments I received. I almost didnt take them to the party because they spread so much and were greasy. So I will make these again but will follow advice of previous reviewers and use less butter. And I didnt have any choc chips so I just added an additional cup of chopped pecans and a small handful of dried cranberries. Cant wait to try them with choc chips.

Fish Tacos

The only substitution I made was to use up some tilapia I had on hand. The fish and the sauce complemented each other so well. Will do this again.

Raspberry Oatmeal Bars

Reviewed: Dec. 17, 2008
This recipe is so easy and delicious! I made some of the suggested substitutions such as a lemon cake mix--along with some lemon zest and lemon juice instead of the water. My bars took quite awhile to brown on the top. Easy to cut and made a nice presentation. Even better the next day.

Spinach Quiche

Reviewed: Jun. 19, 2008
The whole family liked this. Served with a fruit salad and some crusty bread. When I make it again I will only use 3 eggs and maybe 1/2-3/4 cup of milk as I couldnt fit it all in the deep dish pie shell.

Sesame Pasta Chicken Salad

Reviewed: Jun. 19, 2008
The sauce is delightful and I will use it for other Asian dishes. The salad is huge! I added grape tomatoes sliced in half but you could add so many other things to it. I'll probably make a little extra sauce for serving as it appears to be soaking up pretty quickly. Thanks for a great recipe!

Empanadas

Reviewed: May 16, 2008
I used this recipe for the pastry but didnt use the filling. I doubled it but used an 8oz pkg of cream cheese. It sat in my fridge for 2 days and when I went to roll it out it wasnt sticky at all in fact it was like a brick. Not to worry it became easier to work with in time. The dough rolled out great but I think I should've rolled it a little thinner. I used a savory filling of my own concoction. They baked up beautifully and were rich and flaky. I'll use this dough for other things as well and will also try the filling for this recipe. Thanks for the pastry recipe!

Jalapeno Popper Spread

Thanks for posting a great recipe. I used the baked method and added some buttered breadcrumbs to the top as others had suggested. For dipping I used fresh plain bagels cut into dipping sized pieces--the firmness of the bagel was great for dipping.

Mashed Potato Salad

Great salad. I cut back on the mustard initially but added the rest of it at the end as I really liked the tang it gave. Didnt have a bell pepper so added an extra stalk of celery. Will definately make this again.

Soft Oatmeal Cookies

Reviewed: Aug. 15, 2007
My new favorite oatmeal cookie recipe! I used a 2oz scoop and gently pressed with my fingers instead of the sugared fork. Since they were pretty big I increased the cook time to 11 minutes. I completely didnt see that I needed to chill the dough until I came on to write a review. They turned out great and I cant wait to try mix-ins such as raisins or choc chips etc. Thanks for a great recipe.

Brown Sugar Smokies

Reviewed: Jan. 25, 2007
Have made these a couple of times following suggestions from previous reviewers. 1) Use individual toothpicks, 2)Use a broiler pan as they can get pretty greasy, 3) Flip them over once to get even cooking 4) I baked mine til the sugar in the bottom of the broiler pan started smoking--not on purpose-which was approx 18-20 minutes. These were scarfed up very quickly. Thanks for a great recipe!

Spinach and Mushroom Pinwheels

Reviewed: Dec. 21, 2005
The dough is bland and the amount of it rolled into the pinwheel makes for a dry bland appetizer. However the filling is great. Previous suggestions about rolling dough thinner may help but could make it too delicate to slice? Will use the filling with fillo or puff pastry dough in the future. Parchment paper is a must so the egg wash doesnt glue it to your pan.
