About this Cook
I'm 31, and have been married for 4 years now. When I lived at home, my cooking wasn't too accepted, so I just assumed I'd never learn. Well, I have guests over regularly and entertain as often as I can - even if it means creating fancy-looking meals for just my husband and I. Who says cooking for two has to be boring?
My favorite things to cook
I absolutely love cooking maple glazed salmon, chicken with tarragon, and my version of mexican lasagna. They are all quick, easy, and impressive.
My cooking triumphs
My father is one of the pickiest eaters I know. For his birthday, I wrote up a "menu" for him to choose what we would have for dinner. He turned his nose up at all of the descriptions, so I just went ahead and threw some things together. I made a little appetizer containing both mustard and red onions (both of which he hates). He ate nearly all of them and had seconds for supper. That was probably the best feeling I've had!
My cooking tragedies
Okay... one thing I've learned NOT to do... Never try cooking jalepnos or other hot peppers in a frying pan and forgetting about them. Your eyes, nose, throat - they all burn terribly.

Burgundy Pork Tenderloin
This was absolutely delicious. I added 2 packets of brown gravy mix to thicken it up a bit, and instead of chopping the celery, I sliced it thinly like the onion. When I drained the gravy, I kept the onion and celery and served it as well. Everybody loved it! Will definitely make this again.

Peanut Butter Cup Cupcakes
These turned out great! I used butter instead of shortening. I'm sending them with my husband for his work crew - you know how well men, chocolate and peanut butter go together!

Fluffy Peanut Butter Frosting
The flavor was great! Not too strong, but definitely peanut butter. I found it a little difficult to spread, however... even after adding more liquid.
