Quick and Easy Pizza Crust
My family loves this recipe. It's so simple & quick. I'll never make pizza dough in the bread machine again. I used fast rising bread machine yeast as this was all I had, I mixed it with the dry ingredients, added the wet ingredients and beat it with the dough hooks on my electric beater for a couple of minutes. I let it rest 15 minutes to allow the quick rise yeast to activate. As others suggested, I baked the crust for 7 minutes before putting the toppings on. This worked great, except I didn't prick the first crust with a fork and it rose up like a balloon, I poked the next one a few times and it worked out much better. This crust is also great with non-traditional toppings such as Alfredo sauce and chicken, or brushed with garlic & herb olive oil and topped with vegies.

Easy, Cheesy Zucchini Bake
Every year neighbors drop off zucchini and I'm always left wondering what to do with their over-grown vegies. I decided to try this dish and I was not disappointed. It even got a 'This stuff is good,' from my 14 year old son. I used chopped Italian turkey sausage, diced in a few garden-ripened tomatoes, and used fresh corn straight off the cob. Because of other reviewer's remarks about the time it took to cook the zucchini, I sliced and sauteed it for a few minutes with salt, pepper, and a few cloves of crushed garlic. I also decreased the sauce by about half because of the tomatoes. Served with biscuits it was delish. I'll definitely make this the next time I find a basket of zucchini on the porch.

Diego's Special Beef Stew
Thanks for a simple and delicious recipe. My family didn't find the rosemary and thyme overpowering at all. I couldn't use the onion due to allergies, but the stew was very flavorful without it. I took the suggestions of others and doubled the recipe, this fed our family of four comfortably with a little left over for lunch the following day. As with all soups and stews it was even better the second day. I added a cup and a half of frozen peas, preheated in the microwave, and used prepared bouillon instead of a cube and water. As others suggested, it was more a soup than a stew so I also thickened it during the last few minutes of cooking. I will definitely make this again.
