About this Cook
30 years in the restaurant biz has taught me so much about food, recipes, and putting them together, but mainly the joy of putting a plate of food in front of a guest is still the best thing of all.

chicken and more chicken. stuff on the bbq. 'fridge meals...whatever is in the fridge, make a meal of it.

Cuban Midnight Sandwich
Sounds like a great sammy! And this is a pretty light version...which means the 'real deal' is sinful!! Gotta have PORK, baby. No mayo either; it's the pickle juice that steams the whole thing. Used to stand on Calle Ocho and eat these with a slug of Cuban coffee. *sigh* Bonita! But I've made this version and it's AWESOME!

Perfect Porterhouse Steak
A porterhouse, like a t bone, is really two steaks; a strip (yuck) and a filet (yum). The strip side does need tenderizing, usually, but leave the filet side alone. A mechanical tenderizer is best for that strip side.

Puerto Rican Tostones (Fried Plantains)
Tostones are wonderful! Not heard of the 'dip in water' step. You would need to be very, very careful if you choose to do this, as it's the best way to begin a kitchen remodeling job if you are not careful. Hot oil and water are not friends at all :)
