About this Cook
A wife and mother of 34 years - I am my kid's Mom and always have been! Now the challenge has changed from cooking things we love to eat, (the kids are grown and gone) . .to cooking things we love to eat that are healthy and won't clog the arteries. It is like reinventing the wheel and a real shift from what I learned to cook from Mom. Anyone can make it taste "good" with real butter, heavy cream, refined flours and sugars -many of those recipies were created in lean times when variety wasn't available and it was a struggle to get enough calories on the table to fuel a working people. For today's lifestyle when we're much less active,(computers and TV, video games, cell phones and remote everything)we need to use our brains and get back to basics.Throw out the preservatives, cook fresh or frozen, whole grains and lots of them, skim dairy, etc. And let's quit looking at food as comfort! Blankets are comfort - food is nourishment - now let's start cooking what's really good.

I love to bake and Biscotti is my favorite thing these days as it is healthier than your chocolate chip cookie and every bit as good.
My favorite family cooking traditions
Cooking with my daughter, friends, or family is always a wonderful experience. I love to share my kitchen with others as long as they're not just standing around. :)

My cooking tragedies
There have been a few, but the one I'm still reminded of my my husband is when I put a frozen bread dough into the oven to rise(when we were first married) I was counting on the warmth of the pilot light to help it get going. I forgot it and by the next morning it was very solid and indeed warm. It could have been used as a door stop but my husband put it under my pillow as a joke.

Spicy Sweet Potatoes
Excellent change from sweetened sweet potatoes. I chunked an onion and tossed it in with this recipe and left out the brown sugar altogether. Yum. This will be a keeper.

Creamy Rice Pudding
I love rice pudding and I've been trying to make a respectable one for years. I just made this and it far surpasses respectable. The only thing I changed was that I used almost a cup of long grain rice instead of 3/4 because it was all that was left in my package. It turned out wonderfully creamy. I added the tsp of vanilla and a dash of cinnamon and a dash of nutmeg in the last step. Fantastic!!! Thanks Erica!!

Blueberry Zucchini Bread
At 461 cal per slice, no wonder it's good ;) A bit too rich for my body so: I also subbed whole wheat flour for 1 cup of the flour, 1/2 cup applesauce for 1/2 of the oil, and I only used 1 1/4 cups of sugar. I added 1 tsp almond flavoring and about a cup of berries (strawberries and raspberries aside from the fresh blueberries and about a half cup of juice that was with them. Baked in 2 regular loaf pans at exactly the same time. Delish, moist, flavorful. A keeper! The only mistake I mad was that I let a couple of seeds from the rather large zuchini get in and next time I won't do that. (Crunch)
