English Trifle
My sister-in-law made this for Mother's Day. Very YUMMY! A nice Spring/Summer dessert and definitely a crowd pleaser!

Hudson's Baked Tilapia with Dill Sauce
This sauce is sooooo good! I use a different recipe for the fish - Blackened Tilapia with Secret Hobo Spices - b/c it was recommended by so many members. But this sauce is fantastic! Some members complained about it making the fish cold, but I think it adds a nice cool, refreshing taste to the spiciness of the fish. I usually add a little extra lemon to taste. Really yummy!

Baked Potato Soup
I didn't think this soup tasted that great by itself, but after adding some garnishes, it was pretty yummy. I used sour cream, bacon, cheddar chz, and green onions. As suggested by other members, I only used 1/2 t of basil. I might leave it out all together next time. It added a bit of nice flavor, but I think it might be better without. I added an extra tablespoon of flour and an extra potato, and let the soup simmer for about 30 minutes. Before adding the cream, I mashed up some of the potatoes to thicken the soup even more. Very yummy!
