Potato and Cheese Pierogi

Just wanted to share a tip that I have learned after making Pierogis for the last 10 years. Cook the potatoes until soft . Don't use a mixer to mix up the potatoes ... use a RICER and pass all the potatoes through it, then add the cheese and whatever seasoning (I use garlic powder). Mix with your hands until the mixture changes color. Also, don't fool around with the wet spoon to seal the edges. User your fingers. Isn't that part of the fun of cooking??? Let the dough rest covered at room temp before making circles. Keep the size of the dough you are working with to about the size of a grapefruit.

Beef Fondue with Sauces

Made this for my daughter's bday. This recipe brought back fond memories. My mother used to make a bunch of sauces with our fondue as a kid. (Don't think curry was popular in the early 70s tho'. Boy were we really missing something good back then !) Anyway I also made a white horseradish sauce: sour cream, horseradish and some grated onion. All great. Thanks !

Grilled Mexican Steak

Totally Groovy Chocolate Fondue

Made this on Valentines Day. Huge hit with all. I just used regular brandy -- and it tasted great. Served with the usual fruits, but included dried pineapple. Will make again.

Tantalizing Turkey and Blue Cheese Meatballs

I was hoping that these would be a little better. I make turkey meatballs all the time ... and I thought I would try these as something different. I just used whole eggs .. not the egg whites. Also, I wanted these for in a crock pot, so I made a swedish meatball sauce to go with the meatballs. Crowd seemed to like them. Probably won't make them again.

Polish Pickles

The quality of these really depends upon the quality of the pickles. I like to use barrel pickles. I used turkey ham. Very good. Friend told me I had to make them everyytime for football games !

Easy Pasta Fagioli

I followed this recipe to a t. Whole family enjoyed. My 8 year old is a huge soup fan. This soup is better the next day than it is on the day you make. The pasta does soak up the liquid. When I reheated - usually cup by cup -- I added a little bit of water to make it more soupy.

Heavenly Blueberry Smoothie

Made this with some kind of mushy blueberries .. and it turned out great. Didn't freeze the banana. Used regular plain yogurt but added some vanilla. Also didn't have any flax seed. Even 8 year old liked it. I'm going to freeze what is left and eat it as a substitute for ice cream.

Cheese Potato Puff

I wouldn't bother with this one. Might as well make plain mashed potatoes. We found this recipe dry and lacking taste. Kind of a shame since I was hoping to use this as a make a day ahead mashed potatoes.

Creme Brulee French Toast

I have tried numerous baked french toast recipes .. and never really cared for them. Not the case with this one. This one is a keeper. The "creme brulee" at the bottom is what makes the difference. I added triple sec since I didn't have any Grand Marnier. I imagine you could use any flavored liquor. I also kept the crust on the bread. Once I finished putting the pan together, I topped the bread with a little maple syrup. Really good recipe, and scales down well !

Oklahoma Cheese Grits

I make this every year at Xmas -- a tradition in this Northern home ! I usually use the Microwave directions for the grits .. and use a large 8 cup pyrex dish. You can mix it all together in the pyrex dish before transferring to baking dish. I always use bagged shredded sharp cheddar instead of processed. And I use garlic salt not seasoned salt. Delicious !

Dirty Martini Cheese Spread

WOW. Really --- WOW. I made this for a Ladies Only Xmas party. When we go out for dinner, we always get Dirty Martinis, so I thought this would be appropriate. It was. It was a huge hit. The only minor change that I made was to add some garlic powder. (Sorry I am a garlic head .. can't resist.) If you like olives and vodka --- you will love this. I'm planning on taking it to the next party I go to. Serving in the Martinin glass looks really cute. Thanks for the recipe !

Polish Pound Cake

Excellent cake. I gotta say that I usually burn everything I try to bake .. but not this cake ! Maybe it was the low temperature -- I don't know. I did only cook mine for about 2 hours. Also added an amaretto glaze after it had cooled. (Just mixed powdered sugar and amaretto until the right consistency).

Green Salad with Cranberry Vinaigrette

Baked Onion Dip II

I misread the recipe and thought that the first ingredient was cream cheese. I think the addition of cream cheese made this less greasy. I added one pkg of cream cheese, maybe a 1/2 cup mayonaise, and a hand full of shredded cheddar. Used 2 cups onion. Dip turned out WONDERFUL. We have a family full of onion lovers .. and they gulped the dip down. A success given my accidental modifcations.

Skillet Ham, Cabbage and Potatoes

Family loved it. I used turkey ham instead of regular ham. Added a few cloves of garlic. Even 8 year old hogged it down. This is a nice recipe to use to get you out of the daily rut !
