Classic Cuban Midnight (Medianoche) Sandwich
I had left over center cut pork chops that I thinly sliced, and added a thin spread of italian dressing to the bread before mayo and mustard. We used portuguese rolls, which are denser and crustier. What a great sandwich. The pickles make it, don't leave the pickles out!! Not like the real thing but as close as we'll get in upstate NY.

Praline Sweet Potatoes
This is fantastic. I am required to make this every Thanksgiving! I did make a few changes. I used brown sugar instead of white and used only two eggs to give it more like mashed sweet potatoes and less like pie. I cut the vanilla back to one tablespoon, it is enough flavor without being overpowering. I also added 1/4 teaspoon salt, it really enhances the flavor. I've made this many times and I never used all the topping, I like it to resemble a side dish, not dessert. The kids love it and it has converted more than one "I hate sweet potatoes" resister.

Cornbread Casserole
This is one of my husbands favorite sides. I use Jiffy corn muffin mix and 8 ounces sour cream. It is great with so many dishes from mexican to southern barbecue. Once in a while I will add a 4 ounce can of green chiles. Very yummy.
