Sauteed Portobellos and Spinach

The perfect side to accompany steak! I used fresh baby spinach and balsamic vinegar with some chicken broth in lieu of the wine. This was fantastic!

Roasted Garlic Zucchini and Tomatoes

Outstanding! I made this exactly as intended and it was fabulous The perfect amount of spice. I did use a smaller baking dish so I had to stir the veggies and increase the baking time. I will make this over and over in the summer!

Cha Cha's White Chicken Chili

Fantastic! The other reviewers are right... this stuff is spicy! But that is exactly how we like our chili. The chicken broth I used was very low sodium and organic. I love that this recipe doesn't call for salt, and it doesn't need it! I like a thicker chili so I cut down on the broth and added a tsp of corn starch to thicken it up. I also used two fresh jalapenos instead of the canned chilies. I think that it's the cayenne that makes this dish so wonderfully spicy! I also added a can of Rotel tomatoes and a can of regular diced tomatoes. For the beans I used cannellini, Great Northern, and pinto. I added some chopped cilantro at the end. I will definitely make this again! Thank you for sharing!

Oriental Cold Noodle Salad

Great noodles! I used thin whole wheat spaghetti instead of the soba, and added some broccoli coleslaw (without dressing) and thinly sliced red peppers. Sesame seeds would be a great addition. I spiced it up even more with some Hunan chili sauce.

Thai Chicken Balls

Phenomenal! I cut the recipe in half, and instead of the sweet chili sauce I used part Sriracha and part honey (heavier on the Sriracha). SO delicious! My boyfriend loved these meatballs. A definite keeper! Thank you so much for posting.

High Temperature Eye-of-Round Roast

This was delicious! I didn't keep it in the oven for the whole amount of time because I was worried about overcooking the roast. After I turned off the heat I only kept it in for about an hour. The inside was pretty red when I took it out, which is fine for us, but next time I may leave it in a little longer to get on the pinker side of red. I served this with Horseradish Sauce from this site and it was delicious. Tender and juicy!

Beef, Bean and Barley Stew

This was delicious with some minor changes. I doubled all of the spices except for the caraway seeds (kept those at 1/4 tsp) and omitted the salt. I didn't have any cabbage so I used celery instead. And I only had one can of beef broth, so I used chicken broth also. I used 1.5 cups of water and for the rest of the liquid I used chicken broth. With my changes I think it is five stars. Thank you for sharing!

Teriyaki Salmon

Fabulous! I had never used salmon steaks before, only boneless salmon filets, and I feel like the steaks were a lot more flavorful. After I deboned them I rolled them up roulade style and secured them with toothpicks to ensure even cooking. They were perfect! Thank you!

Balsamic Chicken

So delicious! I used the full amount of marinade for only one chicken breast. I sliced the chicken thinly before soaking it in the marinade for about an hour. I used Splenda instead of sugar. I will make this again and again! Tastes kind of Asian with out the added salt from soy sauce. Delicious!

Day Before Mashed Potatoes

I had to add a lot of garlic to these potatoes, but they turned out pretty well. It was fabulous to be able to make them the night before, and in the slow cooker, to free up time and space on Thanksgiving Day (oh yeah, instead of oven baking them I just put the in the slow cooker on high for about 3 or 4 hours). I did have to add some milk because they were tough without it. I have definitely had better mashed potatoes, but for time and space considerations, this recipe was a hit.

Make-Ahead Turkey Gravy

If I could give this recipe ten stars I would! This was hands down the best gravy I have ever tasted. This was my first attempt at making gravy and it was a homerun! I followed the recipe to a t, except I used Wondra flour instead of regular flour. Wondra flour makes gravies and sauces really smooth. My boyfriends mother tasted it as it was reheated and proclaimed it divine, then demanded the recipe. I made this two days in advance of Thanksgiving and just kept it in the fridge. It reheated beautifully. This will be my Thanksgiving recipe for the rest of my life!

Unstuffing Side Dish

A homerun at Thanksgiving! I increased the recipe to serve 12 people. I couldn't find unseasoned bread cubes so I just bought the seasoned kind and scaled down the added seasonings accordingly. Everyone at Thanksgiving dinner raved over this stuffing! I did have to use two whole cartons of chicken stock (totaling 8 cups) in order to moisten the bread enough. So easy to put together and then end result was great! My father texted me the next day and said I should quit nursing school and open up a restaurant because of this stuffing recipe!

Spiced Slow Cooker Applesauce

OMG this was dynamite! Everyone raved over this dish at Thanksgiving. I used a 5 lb bag of Gala apples and cut the sugar to a half of a cup (packed). It was the perfect amount of sweetness for me (and for the 11 others at the table). So easy to put together and 1000 times better than the bottled stuff. I will be making this again and again!

Butternut Vegetable Soup

It always amazes me that vegetables alone, with just a few seasonings, taste so delicious! This recipe is a winner, both tast wise and health wise. Although I don't agree with the boiling time (my veggies were almost overdone after 25 minutes), I didn't change a thing about the recipe except for reducing the broth by 2 cups and adding cabbage with the kale. What a wonderful way to get your vitamins! Thanks for sharing!

Makhani Chicken (Indian Butter Chicken)

Time intensive but well worth the effort! This was fantastic... just enough spice for my palate. There is a lot of sauce, so be sure you have plenty of rice and bread. I could drink this sauce, though. I didn't have garlic paste or ginger paste so I just chopped some up... worked great. We will definitely be making this one again! Thanks for sharing!

Mushroom Orzo

So I overcooked the cod, undercooked the brussels sprouts, but this dish came out perfectly! I was so pleased with the results. Instead of the water and wine I used 1.5 cups of chicken broth. I was nervous when I dumped it in because it looked like a lot of liquid, but the orzo absorbed it all. I would double the mushrooms, though. Instead of the pearl onions I used a small sliced yellow onion. And about half the butter. I will be making this over and over again! Thanks so much for the recipe!
