Unbelievably Easy and Delicious Vegetarian Chili

I only tried this because I was craving chili and, since I'm not much of a cook, this recipe looked super simple. Wow, was I pleasantly surprised! Not only was it quite possibly the simplest recipe I've ever tried, but it tasted great too! And I didn't even use the burger crumbles! To make this dish stretch a little farther, I added a can of red kidney beans, a can of corn, and an extra can of chili beans. When I put it in bowls, I topped it off with grated cheese, Fritos, a spoonful of sour cream, and sliced olives. Yum! I had three helpings myself and nobody even mentioned the lack of meat! This recipe is definitely a keeper for me!

Pasta Lasagna

This recipe is so much easier than lasagna and just as yummy! My family enjoyed it with garlic bread and salad. We doubled the recipe and substituted cottage cheese for the ricotta, but other than that, followed the recipe exactly. My husband said it only needed mushrooms to make this a 5-star recipe! Will definitely put this in the rotation!

Brown Sugar Meatloaf

My family loves this meatloaf! We put the ketchup/brown sugar mix on the top and bottom to get more flavor. The kids even request this recipe! Great with mashed potatoes!

Toffee Sandwich Cookies

Yum! I made the cookies and they were so good I didn't even bother with the frosting! Just ate them as they came out of the oven! Even my husband, who usually prefers chocolate chip cookies, really liked them! Will try with the frosting next time, if they last long enough!

Baked Potato Soup III

Yum! The family loved it! I used 6 potatoes and microwaved them as I was short on time. Peeled them after and just slightly mashed them with fork. I just added salt, pepper, garlic salt and a handful of cheese to the soup during cooking and saved all the goodies to top the soup in our bowls. The soup is very thick, though. We served with crusty french bread and a salad. I don't cook well at all and was very pleased with this soup! Easy!

Roasted Pork Loin

This got mixed reviews at home. My husband and 16-year-old didn't care for the rosemary flavor. My 13-year-old couldn't get enough of it! I thought it was very good, too. We served it with roasted red potatoes, steamed veggies, and dinner rolls. Very filling!

Potato and Cheddar Soup

My husband made this and the family absolutely loved it! He did add quite a bit more cheese to the soup than the recipe called for, though. Next time I would like the onions sauteed before adding as they were still a little crunchy for my taste. Great with crusty bread and butter!
