NOT MUCH TO TELL... I am married, have kids (4 boys, 1 granddaughter), work and lead a pretty normal life I guess. I am pretty involved in volunteering and trying to do my part to make the world a better place. I love to cook but hate the clean up so I like to find short cuts where I can. We like to camp so I also like to find new camping recipes, especially ones for the pie iron!

My favorite family cooking traditions
I always bake cookies for the holidays and always try to make at least a couple new cookie recipes each year. I love to bake my boys a birthday cake on their birthdays - they have never had a store bought birthday cake! =) I love to create or try a new pie iron recipe every time we go camping. We enjoy trying new recipes together and all my boys can cook.
My cooking triumphs
I think every time you sit down as a family around the table with a hot, homecooked meal it is a triumph for us working Moms!
My cooking tragedies
I always (and I mean always) burn the rolls especially at large family gatherings like Thanksgiving so I have been permanently relieved of roll duty! =)

Spicy Bean Salsa
Thanks for the recipe Susan! I made this as instructed and it turned out wonderful. After it sat for a couple of days in the fridge it was incredible. I definitely would make it at least 24 hours in advance and 48 if you can. I also added cilantro the second time I made it and loved the addition, but the recipe is great as is!

Cold Tuna Macaroni Salad
I made this recipe as instructed and it was very good. I made it again for a quick dinner and made a few changes, which are just my personal preferences. After the pasta was cooked I added the Italian dressing, 1/2 cup finely chopped onion and the celery, salt and pepper and put it in the fridge to chill. I also mixed the tuna with 1/2 cup mayo first and then added it. Then I added 2 hard boiled eggs chopped and I used grape tomatoes halved. I left out the sugar, because I don't think you need it. I served mine on romaine lettuce leaves with melon. Very good - thanks for the recipe!

Dump Cake V
Thanks Barbara for the recipe. I have made it a few times now and always get great reviews from anyone who has it. Some general comments: You can use any kind of pie filling, I don't drain the pineapple, or just drain it little, and use 1 stick (1/2 cup) of butter. I also use pecans instead of walnuts, just a personal preference. This is a simple, fast, yummy recipe!
