Garlic Balsamic Shrimp

Holy Cow!!! What a wonderful way to prepare shrimp.. soo flavorful. I substituted fresh basil and added lemon juice. Tossed the shrimp in a nice salad for a great summer meal. Fantastic!!

Monte Cristo Sandwich - the Real One

this is exactly what i was looking for!!! reminds me of a sandwich from my fav deli in california. this one is quite a treat....you will impress. very tasty, easy and pretty. side note...i found the toothpicks were not necessary especially after cutting the crusts off. the insides stayed intact just fine.

Cream of Pumpkin Soup

there are not enough stars for this one!! i loved it!!! soo easy to whip up. i used my hand held emersion tool and didn't even have to take it out of the pot. the flavors are so warm and cozy. i did ease up on the whipping cream to save some calories. i think one could even get away with a non fat creamer in lieu of the cream and not sacrifice taste. loved it!!

i liked this pie. it was a bit on the dry side upon serving. after overnight in the fridge and warming up....much more moist. all in all a nice way to prepare veggies!!

man oh man...very very tasty! also, the citrus flavor brightened this dish. it is sweet and savory oh so good!!! i like the way the beef stays crisp even in the sauce. restaurant quality for sure!!

Fiery Fish Tacos with Crunchy Corn Salsa

wow!!! when they say fiery they aint kiddin!!! very good recipe for the lover of spicy foods. my husband absolutely devoured these tacos. i did spray the fish with pam cooking spray and added a seafood spice mixture (store bought) and then proceeded with the recipe as followed. the cayenne pepper gives it that nice blackened cajun look and taste after grilling on the bbq. try these . you will like.

this is a traditional lemon bar with that fabulous crust!! quite simple to put together and very tasty. i was looking for a more "lemon curdy" consistency with a bit more tartness.

Apricot Chicken with Balsamic Vinegar

loved this!!!!! obviously, you will need to be a lover of apricots since the dish is based on them. i loved the sweet and savory combo....the onions and balsamic vinegar lended so nicely to the sweetness of the apricots. very nice dish.

Cream Cheese Pound Cake I

this is a very nice cake. sorta reminded me of eating one big soft sugar cookie! it is extremely rich and one can really enjoy just a bit at a time. i did top with whipping cream and cherries jubilee as well. very nice with coffee.

Ten Minute Enchilada Sauce

this is so much nicer than the canned from the grocery store!! the chili powder in this recipe also gives the finished product a beautiful color. i used mexican chili powder (hot) and for those who love spicy it is perfect. for a milder sauce i might try half mexican chili powder and half regular chili powder.

mmmm....this one was okay i have say. i did use italian style bread crumbs for a bit more flavor but they weren't wonderful to me. much heathier than fried so that's a good thing. i have found better recipes to get veggies in.

Rosemary Ranch Chicken Kabobs

what a delightful recipe!!! i was a bit leery of the concoction for the chicken to marinade in but the marriage of flavors was so tasty! i added a little brown sugar (i find it carmamelizes nicely and gives chicken a glossy finish and added paprika on the kebobs for color. the chicken had a wonderful barbecue flavor and the inside was very moist and really flavorful. ranch dressing and rosemary...who would have known? this one will not disappoint.
