Eclair Cake

Reviewed: Dec. 22, 2009
I've had this several times before and was hoping that this recipe might be the one that makes me LOVE it, but it wasn't. Considering the amount of positive feedback, I made it exactly as written. While it was good, it wasn't a spectacular dessert and I'd only make it again for the kids and not as a dessert to a dinner party. Thanks though!

Beer Dip I

Reviewed: Dec. 22, 2009
Even though I used HALF of the ranch mix like others suggested, this dip was extremely salty...and I love salt. I used Miller Lite beer. I checked and checked if I missed something in recipe, but I didn't and I cannot beleive there are more people saying how salty this was. Unfortunalty, I will not make this again. Thanks though!

Cranberry Pistachio Biscotti

Reviewed: Dec. 22, 2009
I thought this was really good. Easy to make too. I lessened the amount of nuts and used craisans instead. I don't understand how other reviewers thought to dough was ungodly sticky....mine was very manageable and I used water on my hands to help it not stick. I dipped half in white choc too. People who like biscotti loved mine.

Super-Delicious Zuppa Toscana

Reviewed: Dec. 9, 2009
This was fabulous. I took others suggestions and used kale instead of spinach and added it just before I served each bowl and it was the perfect texture for the soup. I also used yellow potatoes. This soup doesn't leave a heavy feeling, so it's perfect with small salad and bread. I'll make this again for sure.

Slow-Cooked Corn Chowder

Reviewed: Nov. 20, 2009
This wasn't bad. My only wish was that it was thicker. It's more soupy than chowdery. Next time I will thicken and adjust some spices...but overall it was good!

Taco Pie

Reviewed: Nov. 20, 2009
This was pretty good. I used ground turkey instead of beef. Didn't have sour cream, but made it anyways. Next time I won't use as many chips, and I'll add tomatos and olives. I loved the crust on the bottom, that's what makes it taste so good. Hubby loved it too!!

Chicken Pot Pie IX

Reviewed: Nov. 12, 2009
This was FABULOUS. Took other reviewers suggestions and bought a rotissere chicken. Also, I baked the bottom crust for at least 10 minutes first, before adding ingredients. I really think this helped the pie to become crispy all around. My husband didn't beleive that I had made this and thought I bought it at a restaurant!!

Watergate Salad

Reviewed: Nov. 12, 2009
Thought this was great. Didn't use nut and in place used shredded coconut. Next time, I'll use sugar free cool-whip and SF pudding to make it healthier.

No Beans About It - Chili

Reviewed: Nov. 8, 2009
I really, really wanted to like this because most of us in my family do not like beans. However, to us, this tasted more like a spaghetti sauce. I tried adjusting spices to taste more like chili, but I never really could. :(

World's Best Lasagna

Reviewed: Nov. 8, 2009
While this lasagne was good and everyone enjoyed it, it was not worth the amount of time it takes to make this. After preparing the sauce and letting it simmer for 3 hours in a slow cooker, and the amount of time it took to assembe the lasagne itself, I was hoping for bigger excitement at the table. I'm glad I tried it, but won't make it again. Thanks for the recipe.

Delicious Chicken Casserole

Reviewed: Sep. 4, 2009
This was a great meal. I made minor changes with spices to adapt to my family...also added a little corn to make it a little heartier. Kids didn't like the cracker topping, but I did!! Thanks for recipe.

Tangy Slow Cooker Pork Roast

Easy and simple...nice flavor. Not too sweet at all. Although it was a good meal, it wasn't a recipe that I will rush to make again.

Mondi's Super Simple Chicken

Reviewed: Aug. 25, 2009
I givet his 3 1/2 stars. I made as is, but added a little lemon juice as other suggested. It was good and tasty, a nice change for baked chicken...but it wasn't exciting enough to make again. I'm glad I tried it though! Thanks for recipe!

Chicken Enchiladas II

Reviewed: Jul. 20, 2009
Some prior reviewers confuse me about recipes being boring or lacking flavor. When I cook, I tailor all recipes to suit my family, so I rarely make something as-is as far as spices are concerned. Regardless, this recipe was fabulous and the flavor was great. Per other recommendations, I used 1/2 mushroom soup and half chick soup. They sell it in one can. I also used ground chicken and added extra (1 1/2 pounds) so there was enough filling. Other than adding a little more salt and garlic and other standard staples, I used all other ingredients. My husband and kids loved it and want me to make again. It is very filling and somewhat heavy, but man was it good! Thanks for the recipe!!

Berry Cheesecake Parfaits

Reviewed: Jun. 8, 2009
I did not make this dessert, but only used the recipe for the creme to put in crepes. OMG this was fabulous! The ONLY change I did was used white choc pudding instead of vanilla. I used my own whipping creme too. This creme could be used for anything and I used it to fill crepes with strawberries. AWESOME!

Crispy Potato Wedges

Reviewed: Jun. 8, 2009
Unless I did something majorly wrong, no one liked the taste of these. Maybe if I used a different kind of potato, but these fries had a big "potato" taste to them and we didn't like it.

Cherry Tomato Corn Salad

Personally, I thought this was delicious, but other members of the family didn't. I added orange bell peppers and the dressing was delicious. I'd make this again, but prob when I have more people who would like this.

Hamburger Pie

Reviewed: Apr. 29, 2009
This meal was a hit with my family. I made the recipe "as is" with a couple simple modifications. I took other suggestions and used one can tomato soup and the other tomato sauce. Also added a squirt of worchester and ketchup to kick it up a bit. My daughter suggested adding corn to it, so I did and it was great. The only change I would make is using MORE potatos. I knew 4 potatoes were not enough, so I boiled 7 small ones and it still was not as much potato as I would have wanted. I covered the entire casserole with potatoes and not just the edges. Thanks for the recipe...this was great as lunch leftovers and I will make it again for sure!

Pretty Chicken Marinade

Reviewed: Mar. 5, 2009
I thought this was ok. I thought the smoke flavor was way too intense, but one great thing was my chicken was very juicy when cooked. I did not grill this and baked it in the oven like another reviewer did. I don't beleive this had anything to do with the taste, but I doubt I will use this recipe again, unless I modify without the smoke flavor. Thanks for the recipe and it was nice trying something new!
