About this Cook
I'm a married mother of four (3 girls, 1 boy - God help him!) who's been cooking since I was ten. I love to try new recipes and things my family wouldn't normally eat. They usually end up loving it!
My favorite things to cook
Gumbo, crab cakes, sweet potato pie, ambrosia, meat and veggie lasagna, baked ziti, chicken parmagiana, chicken pot pie, and anything with chocolate as an ingredient.
My favorite family cooking traditions
Baking cookies on Christmas Eve to leave, with milk of course, for Santa.
My cooking triumphs
My hubby's uncle makes great seafood gumbo. After tasting mine made with ham, kielbasa, chicken, and shrimp he gave me a wonderful compliment - it was better than his!
My cooking tragedies
There are many, but here are the two that stick out most in my mind...(1)After learning to make lasagna, I decided to use low-fat ricotta and mozzarella cheeses. BIG MISTAKE! The lasagna was running off the plate! (2)When my son turned three, I thought it would be nice if I made his birthday cake. I used a recipe given to me by a co-worker. I used a pan that was too small and the cake spilled over the sides. The taste was delicious, but I had to send my hubby to the store for a presentable birthday cake!

Chicken Pot Pie IX
Absolutely delicious! I used Pillsbury refrigerated pie crusts and they worked perfectly, though I think I may try it with crescent rolls next time! I brushed the bottom crust with butter and baked for appr. 10 minutes before filling. I sauteed all the veggies and chicken and brushed the top crust with milk for a nice brown color. Beautiful color and the gravy/sauce has a delicious taste. This one is now my favorite chicken pot pie recipe!

Pork Chops to Live For
Loved this! I made 6 thick-cut bone-in chops. I did not coat them with egg and flour - simply seasoned them with salt, pepper, garlic powder, and paprika - then browned them in butter and olive oil. Mixed 1 can cream of mushroom and 1 can cream of chicken with 2 c. milk (wanted extra gravy). Put chops in crock pot, then sprinkled Lipton onion soup mix on top, then soup/milk mixture over. Cooked for 6 hours on low. Next time I'll trim the fat off the chops, as it made the gravy a little greasy. Gravy was very good, though. Served with rice and green beans. Even picky 15 y.o. loved it!!!

Hash Brown Quiche
The family and I like this enough and I will definitely make it again, but with a few changes next time. First, I browned the hash brown in butter before putting them in the dish. Next time I would cook them until they're cruchy - the filling makes the hash brown crust soggy! Also, I would sautee the onions before adding them to the filling - they were still had a little crucnch to them. It took more than 2 eggs (6 to be exact) to fill the crust. I used breakfast sausage and a cheddar/jack combo. Be sure to slightly undercook the quiche - eggs continue to cook and if it's cooked too long, it'll be dry. Overall, good recipe. Just needs a little tweaking.
