Refried Beans Without the Refry
Fantastic! I did change a few things, but this was delicious. I used 2 cups pinto beans, 1 cup black beans. I also added chili powder and lemon juice and vegetable broth. I also cooked it on low, and used only 5 cups water. (To cook this on high is a little ridiculous) Very Delicious! Much better than any other beans I have ever had.

Baked Tofu Bites
Pretty tasty. I followed the recipe with a few substitutions. Tamari instead of regular soy sauce, rice wine vinegar instead of regular, fresh chopped garlic instead of powder. I also left out the liquid smoke, I just didn't think I would like that. It tasted very good. I marinated about 20 minutes, perhaps longer would be better as the sauce lost some of it's potency during cooking.

Chicken Salad II
Delicious! I was surprised at how well all the ingrediets blended together. I used crushed pineapple which added a great sweetness to the whole dish. I was weary of so much cilantro but it went so well with everything else! Everyone I have served this to has loved it - even my 18mo old son!
