Enchilada Casserole
This was so easy to put together and it was my first experience with tempeh. I liked it! I added three fresh tomatoes, chopped, as well as a tablespoon or so of Mexican Seasoning that was salt free. No need to add any salt to this dish!

Savory Grilled Potatoes
I used lowfat mayo and light butter...delicious! I turned the flame to the lowest setting on my grill...really, super terrific. The only thing that I will change for the next time will be a bit more salt and double the onions...I loved the onions!

Butter Snow Flakes
The tastiest spritz cookie that I've ever made. Didn't have any oranges in the house, so I skipped that part...still delicious!
