Baked Delicata Squash with Lime Butter

We liked the lime butter (I actually used lemon juice and lime zest) but 30 min wasn't long enough for the squash. It was a bit annoying trying to scoop the buttery squash out at the table, so next time we try this I will scoop and mash it ahead of time and mix the butter into that.

Pumpkin Black Bean Soup

An excellent way to use up the end of a can of pumpkin! I added some dried ground chipotle pepper towards the end, and subbed green onion because that's what I had. The pumpkin rounds it out nicely without being overpowering.

Robin's Quinoa with Mushrooms and Spinach

We love quinoa; this will be a great addition to our rotation. My 1-year-old ate it by the fistful. We added diced chicken (marinated in balsamic vinegar) to the skillet with the mushrooms. Served with baked squash for a colorful, filling fall meal.

Black Bean Lasagna

Added cumin and chili powder to beans, based on other reviews. Skipped the guacamole but included a diced zucchini just to get more veggies in there. We loved how the layers stayed in a stack just like a "real" lasagna. Will definitely make this again.

Mini Frittatas

Very good; made for company and everyone loved it. Doubled the recipe, all except for cumin based on other reviews. Still a prominent flavor, but not overwhelming. Subbed cottage cheese for the ricotta and plain yogurt for the sour cream because that's what I had. Great way to use up some spinach! Will make again.

Potato and Cheese Frittata

A good start, but would be bland without some additions based on previous reviews. Added garlic with the onion, shredded Parmesan with the egg, mushrooms, spinach, and cayenne. Great topped with sour cream!

Oatmeal and Applesauce Pancakes

Very moist! Be sure to poke a slit in each one with the edge of the spatula when you flip them over. It will help release the steam so the inside gets cooked instead of staying gummy. I added blueberries, which turned out great.

Joel's Jerk Chicken Pineapple Pasta

After reading reviews, I decreased the cinnamon and red pepper. Also added sliced mushrooms, a diced red bell pepper, and more pineapple juice + cornstarch to make a sauce. Came out wonderfully flavored (and the red pepper was a welcome touch of color) and not too spicy. Served over brown rice. Will make again, using 2 bell peppers in different colors, and maybe a sweet onion.

Baked Oatmeal I

Cut back on the sugar and added some vanilla. Also added cinnamon to the batter. Doubled recipe. Did not make crumb topping and used applesauce/butter for the oil. Added peaches to half and raisins to the half. Got rave reviews at our runners' breakfast! Will freeze leftovers in squares for quick breakfasts this winter.

Aioli (Garlic Mayonnaise)

All I could taste was the oil, and I even cut it back. Tried adding more seasonings (lemon, garlic, cayenne and even sugar) to salvage it, but nothing worked. It set just fine but tastes awful.

Millet-Stuffed Peppers

Would've been bland as written, but is a good starter. Added cumin, chili powder, garlic powder, cayenne, and pepper, and mixed in chopped jarred jalapenos. Topped with cheddar and sour cream. Made a LOT of filling. Filled 5 peppers with enough leftover for lunch.

Blueberry 'N' Spice Sauce
