Pumpkin Black Bean Soup
An excellent way to use up the end of a can of pumpkin! I added some dried ground chipotle pepper towards the end, and subbed green onion because that's what I had. The pumpkin rounds it out nicely without being overpowering.

Robin's Quinoa with Mushrooms and Spinach
We love quinoa; this will be a great addition to our rotation. My 1-year-old ate it by the fistful. We added diced chicken (marinated in balsamic vinegar) to the skillet with the mushrooms. Served with baked squash for a colorful, filling fall meal.

Baked Kale Chips
Awesome snack! I only wish I'd made more. Used olive oil spray instead of oil. Will make these OFTEN.
