About this Cook
I'm married w/2 school-aged children. My husband and I both enjoy cooking and we refer to Allrecipes as our go-to spot for new recipes all the time. My biggest motivators are easy, healthy and delicious (not necessarily in that order!).
My favorite things to cook
Roasted chicken dinners, anything on the grill (YUM!), and I love to do a gourmet meal once in a while (for special occasions like anniversary, special guests) like filet mignon or chicken remoulade. I love standard casserole dishes like goulash and my mom's traditional potato and sausage casserole.
My favorite family cooking traditions
We like to bake pizzas with the children, and make cookies and other fun/easy dishes with the kids.
My cooking triumphs
Every Christmas for the past few years, we have prime rib for the entire extended family (about 17 people total). I have a fool-proof recipe I got from a sister-in-law years ago and it's perfect every time! Everyone always raves about it, that's why we have it every year. Have been using Martha Stewart's perfect turkey recipe for Thanksgiving every year and it is excellent, the best turkey anyone in our family has ever had, hands down. One year the guys decided to deep fry a turkey and it was horribly dry, so back to Martha's recipe it was.
My cooking tragedies
I once attempted to make potato salad for a family get-together and overcooked the whole 10 pounds of potatoes, turning it to mush. Wasted all the ingredients and had a virtual melt-down in the process. I have never been so upset at myself ever!

Beer Batter Fish Fillets
This fish was awesome. Husband made it. He added Old Bay seasoning, garlic powder and onion powder. Cut back on milk and beer like other reviewers to make a thicker consistency. Also, soaked fish right in the batter and it stuck to the filets nicely. Great tasting recipe!

Onion Rice
This is super easy and yummy rice. I like it better than boxed mixes, and it's so easy to make it healthier by adding veggies you like. I added some garlic and fine chopped carrot. Made a double recipe and put chopped chicken and green peas in it for an easy lunch for the following day.

Healing Cabbage Soup
This is great. I used beef base instead of chicken as I prefer it better. Great recipe.
