Red River Beef Stroganoff
Excellent recipe, in general. I suggest a little garlic salt instead of plain salt, and suggest that the final mixture be simmered on low for at least 2 hours to make the meat more tender. Will definitely make again. PS: use whole wheat egg noodles, low fat sour cream and olive oil instead of butter to make it healthier!

Roasted Sweet Potatoes & Onions
Delicious! I made it without the amaretto, and can't imagine how it could have been better! I left it uncovered to cook for almost one hour, which made the potatoes nice and crisp.

Nita's Lamb, Green Beans and Tomatoes
I thought this dish was delicious! I used cubed beef tenderloin, and addedd a large jar of sliced mushrooms. I served it over whole grain penne pasta so that the sauce was retained in the hollow centers. It all tasted even better the next day!
