Microwave Popcorn

I made this immediately after reading reviews on it. As one reviewer suggested, I used 1/4 cup of kernels, 1 tsp oil and 1 Tbsp sugar to make Kettle corn. Popped it for 2 minutes and now I am enjoying it as I type! Great, quick snack!

Campfire S'mores Smash

Had a bunch of people over for a firepit and hotdogs tonight and decided to make these instead of doing them the traditional way - it was also very cold (about 2 degrees above freezing) and didn't want people to have to wait for S'mores. Anyway, I did it on the stove top (the butter and marshmallows), added chocolate chips with the broken graham wafers and pressed it into a 9" square lined with parchment paper. Cut it into 16 pieces and everyone LOVED it. Will definitely do this again, thank you!!

Bacon for the Family or a Crowd

This took WAY longer to cook than stated, and I used regular sliced, not thick. I turned it, and eventually separated the pieces (from the recommended layers) and eventually turned on the broiler to crisp it up. I like that it doesn't curl up, and it is very easy to do this way. I will do it again, especially for a crowd, but I will take the time into better account. Luckily, turning on the broiler at any point speeds up the process. Overall, great way to do bacon.

Macaroni and Cheese V

I omitted the onion but otherwise followed recipe as is. I have never added the breadcrumb topping before and I liked this dish a lot. My son loved it, daughter didn't (but not surprising), and hubby liked it but prefers a creamier, saucier macaroni. I will keep this in my recipe box, and maybe even make it again.

Mussels in Curry Cream Sauce

I thought these were fabulous! My husband found it a little rich, but loved it also. I served it with a mixed greens salad and sourdough bread. The bread was perfect for dipping in the flavorful sauce. I used extra curry as per other reviewers comments, and I'm glad I did. I will definitely make these babies again!

Uglies

I am rating this a 4 for 'easy to prepare' - my 6 and 11 year old kids helped - and it had good flavor. My 11 year old would prefer it with taco meat, or my recipe for Sloppy Joes. My 6 year old would like taco meat, and preferrably not touching the biscuit! It was a great dinner to have on Halloween, though. Quick, easy, and very Ugly!

Jamie's Cranberry Spinach Salad

My girlfriend (not an AR member) brought this over last night for a potluck and I told her I would rate it. It is definitely a 5! Wow, what a flavorful, delicious salad. She used a beautiful mix of greens with the spinach, and everyone raved about it. She said she had to spoon the seeds over the salad as she didn't use all of the dressing, but otherwise no changes made. I've added it to my recipe box, and will make this myself!

Flank Steak a la Willyboy

I made this and because of a change in plans, it marinated for 2 days in the fridge. I cooked it on the bbq for 7 minutes per side, let it rest, and cut it in very thin strips. We had it on Greek pitas with tzatziki, cucumbers, tomatoes and mixed greens. It was pretty good. I have a similar recipe that uses red wine vinegar instead of red wine, so I think I will try that next time - I found the wine flavor a little too strong, and I love red wine! Will definitely serve it the same way again.

Steamed Radishes

My radishes were quite big, so I cut them in half instead of peeling a strip off. I steamed them until they were fork tender, added butter, a touch of salt and lots of pepper. My husband and I were both pleasantly surprised by the mild flavor. It was very nice for a change, and I will do this again if I find myself with a bunch of radishes.

Sopapilla Cheesecake

Okay, so the 5* rating is for how easy it is, and how delicious it is! This is a great recipe, but DEFINITELY not one for everyday! The ladies at the potluck all raved about it, but I couldn't help but laugh whenever someone asked what was in it. I did mix the melted butter with the sugar and cinnamon as suggested by one poster and it glazed it nicely. I also drizzled a bit of honey on it when it came out of the oven (from the Sopapilla Cheesecake Pie recipe on this site). Probably won't do that again, as it's not really necessary. The description for this recipe is right on. It'll go into my "it's crunch time and I need an easy recipe quick" file.

Best Beef Dip Ever

Did this overnight as suggested so I could chill the broth to skim off the fat. I used reduced sodium soy sauce, 1 litre reduced sodium beef broth (4 cups) plus 2 cups water. Everyone raved about it! I still found it a little salty, so I may use even less broth next time. Actually, I just put the leftover broth in the freezer for the next time, and will add water to make the 6 cups. Will definitely do this again.

No Bake Cookies III

We have company coming for dinner, and it's too hot to turn on the oven, so I made these today with my 6 year old daughter. I did the cooking part, she scooped them on the parchment. I love the subtle peanut butter taste. It's very easy, and the ingredients are staples, so it will be a great last minute "I need dessert, quick!" recipe.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

I don't know what "ground chili pepper" is, so I used chili powder, and used garlic salt instead of regular salt on the ribs. I also figured, since it is "whiskey ribs" that 2 tsp wasn't nearly enough, so increased that to 2 tbsp. I did the ribs in the morning, and warmed them us just before dinner (covered with foil and a bit of water in the oven at 300* for 20 min), then basted them with sauce and broiled them. This was only because I had other things on the BBQ for a potluck and was trying to cook 3 things at once. The ribs turned out amazing, and I will DEFINITELY do these again. Huge hit with everyone!

Lemon Bundt Cake

I did the cake exactly as written, but had to cook for 45 minutes for it to be cooked through - seems to be the general concensus as per other reviews. It was very easy to make and turned out beautifully. I rated it a 4, as I put a glaze on it and didn't taste the cake before I glazed it. It was excellent with the glaze, but I will make it again without the glaze and freeze it in individual portions for school lunches as my kids loved it. Will definitely do it again.

Greek Orzo Salad

LOVE this recipe. Found it after having Starbucks orzo pasta salad and was looking for something similar. I added chopped roasted red pepper instead of tomato, and less olives - I don't care for them, but added them anyway. I also didn't measure the lemon juice or seasonings, just did it to taste, and added the marinade from the artichokes right away. I couldn't wait an hour to try it, so had some right away. Again...LOVE IT. Had it again with dinner, and hubby thought I bought it, as it was so "professional". Will definitely make this again!

Wow, after all the "these are so moist" comments, I was surprised to find them a little dry. The taste was okay, but I'm thinking I need to try again with different apples. Don't know if it will help, but I'm not ready to write this recipe off, yet.

Hearty Split Pea Soup

I was looking for soup recipes to make ahead and freeze for my husband's lunch. I only gave it 4 stars because I made a couple slight modifications based on other reviews. I used double smoked farmer's sausage (diced) in place of ham; 6 cups water with 2 packets chicken bouillon; omitted bay leaves, and milk. What an easy and delicious soup! I was able to make up 4 portions to freeze, plus a bowl for myself to have today. Thanks for the recipe, will definitely make "ahead" again.

Perfect Pumpkin Pie

I was never a big fan of pumpkin pie, but since my husband is, I first made this for him years ago. It is the best pumpkin pie I have ever had - very creamy, not too sweet or spicy. I omitted the ginger, because it was never a spice I had regularily, and I don't miss it. This is the only recipe I will use - a success every time.

Best Brownies

I rated this 4* as I increased the cocoa powder to 1/2 cup. I also didn't grease and flour the pan (used a square stoneware baker and didn't have any sticking issues). I used this recipe in a Chocolate Mocha Trifle and turned out great.
