This was a good quick casserole that was easy to make. It did not require any fancy or strange ingredients that I didn't already have. My husband and I thought it was pretty good. I used Johnny's Seasoning Salt for spice since some of the reviews said it was bland, and I added cheese as suggested. My kids wouldn't eat it because of the onions so I think next time I'll leave those out and add in corn (as other reviewers suggested).

My family loved it. Next time I think I'll half the recipe (it makes a TON!) and add crushed taco chips on top before serving. Also, my family likes spice and hot! This was pretty bland to them w/o spicing it up w/salsa and hot sauce after. Next time I'll add the spice to the receipe when cooking!

Very hearty and very easy! We also served it with cornbread and it was delicious. After reading some other comments I spiced up mine with chili powder and red pepper flakes and I'm glad I did. It had just the "zip" we love. I will make it again and again.
