Gingerbread Men

Pleasantly surprised at how good these are. Although O prefer a much spicier cookie, kids will LOVE these. They made about 24 small (3x2) gingerbread men. We baked for 1o minutes on parchment anf they were great. Looked very soft but crisped up while on sheets.

Macaroons

Possibly one of the quickest recipes I have ever made. 5 minutes (or less) from cracking the eggs to oven. These were so simple and very good. If you like an airy, sweet macaroon with a sticky tangle of coconut, these are perfect. I baked on parchment for 12 minutes.

Peppermint Marshmallows

These are wonderful. Use a candy thermometer if you have one and cook until 235 -takes the guesswork out. I added peppermint oil and omitted the vanilla. We crushed candy canes and some leftover peppermint meringues to dust on top. These are HUGE-filled a 11x7 pan. After they are cut, I shook them in a big platic bag filled with the cornstarch/sugar/crushed candy canes. I'll be making another batch for Christmas Eve cocoa as I don't expect these to last long!

Hazel's Meatballs

This great aunt Hazel must have had a happy husband b/c these are great comfort food. Followed exactly, except for adding some Heinz 57 (needed to empty bottle) to sauce. yum.

Spritz Cookies II

I have tried several spritz recipes from this site with mixed reviews. This one was terrific. The cookies came out of the press easily and no chilling required! Use the dough as soon as it is made. I may add a pinch of salt next time to bring out the nuttiness of the butter.

Apple Slices

My Aunt Margaret has made this recipe for years. It is like apple pie, but the crust is less flaky. A confectioner's sugar glaze is a perfect foli for this, even better if you add a bit of lemon juice to the glaze!

Pumpkin Chipotle Soup

This is a delicious, smoky and unexpected twist on basic pumpkin soup. You can find the chipotle peppers and the sofrito in the Hispanic section of your grocery store. Save the leftover chipotles in a ziploc bag in freezer & toss them in the next time you make salsa. Evaporated milk can be subbed for the cream if you want to lighten it up (and next time may use chicken stock). Yummy recipe! Thank you, Chris!

Anna's Chocolate Chip Cookies

These were REALLY GOOD, on the thinner side with crisped edges and soft, chewy middles. They spread b/c of the all butter content. Baking on parchment keeps them from getting too browned. The neighbor kids gobbled these up!

Chemical Apple Pie (No Apple Apple Pie)

My son made this for a 2nd grade science experiment. It actually tastes very similar to McDonald's apple pies...so if you are partial to those (we are not), you will likely love this recipe! I gave it 4 stars b/c our friends tasted and did think it was apple pie.

Extra Easy Pumpkin Cookies

Yes, it is a "cakey" cookie. However, if you want a firmer, denser (less-cakelike) cookie, substitute a stick of softened butter for the applesauce. While I do sub applesauce often b/c it lowers the fat content...it also changes the texture of baked goods, creating a spongey texture. You can also do 1/4 c. applesauce, 1/4 cup butter or oil. I increased the spices and added 1/2 tsp. of ginger, too. A browned butter icing is yummy drizzled over tops. Just brown a bit of butter until it's nutty brown and beat in a bit of powdered sugar until it's your desired consistancy. Next time I make these, I will sandwich them with marshmallow fluff beat with cream cheese. Excellent "fall" whoopie pies.

Warm and Spicy Autumn Punch

So GOOD! And so much less expensive than cider. I doubled the recipe, tossed it all in the crock pot and added a handful of red hot candies and used brown sugar instead of honey. It's a keeper!!!

Chipotle Sweet Potatoes

These are terrific. I tossed the potatoes with olive oil and roasted in covered dish. (Just think it gives a better flavor). Per another review, I used only 1 Tbs. butter. You can also cut the fat by using evaporated milk. Sooo good. Find the chipotles in the Mexican section of your market. The leftover chilies can be placed in Ziploc, squeeze out air and put in freezer for another use. They are great in homemade salsa, too.

Pretty yummy waffles. Folding in the egg whites made them so light. I think they could be improved by using melted butter for the oil as there was just something a little off, a bit spongey?

So delicious. Baked in a 9x13 pan for about 35 minutes. We added about 3/4 cup cocoa powder and a handful of dark chips. Omitted nuts.
