Black Bean Vegetable Soup
My new favorite soup! I added an extra teaspoon chili powder, used an entire 28 oz. can of tomatoes, an entire 15 oz can of corn and 1/2 cup of regular barley, that I had not soaked. With the addition of the barley I cook it about 1 -1 1/2 hrs. The first time I made it the only tomatoes I had were Rotel and it was way spicy, but good. I top each bowl with about a teaspoon of sour cream and stir. That addition makes it taste wonderful!

Breakfast Pies
Wanted to try this with what I had on hand. I pulled Pillsbury Grand Biscuits apart to make half the size, rolled them out & used my larger 6 muffin cup pan. I used 5 eggs & some chopped ham with the other listed ingredients. Baked until the egg was set. Very good and they are just fine warmed in the microwave if you have leftovers. I think they would be good frozen, thawed and re-warmed, also. Great "kid friendly" recipe for a healthy breakfast.

Apple Pie Coffee Cake
Had everything on hand to make this cake & tried it for a dining group. It was a big hit! Leftover cake was even more moist the following day. The apple pie filling I used was a "special edition" Caramel Apple Pie I had found at my favorite discount grocery store. The slices were pretty big so I chopped those for the filling. Immediately after glazing the cake I sprinkled chopped pecans on and thought that was a nice addition. Great recipe for a fall dinner dessert! Thanks, so much, for sharing it.
