My mom didn't cook a whole lot growing up, but I do remember the homemade spaghetti sauce recipe that she got from my grandma...we'd always have tons leftover!

Vietnamese Fresh Spring Rolls
My husband and I loved these spring rolls...they tasted just like the one's at our favorite Vietnamese restaurant! Unfortunately I didn't have mint or Thai basil. And instead of the sauce I put together a peanut sauce/Siracha mix which was excellent! Thanks for sharing!

Chicken Souvlaki Gyro Style
This hit the spot! I love Greek food, but don't always want to have to go out to get it. For the marinade I used the balsamic vinegar instead of the vinaigrette because that's what I had on hand, added minced garlic and I loved it! I also used Greek yogurt over the plain. I made a quick lemon orzo soup to go with it and it was a perfect, quick meal. Thanks for sharing!

Chicken Tortellini Soup With Zucchini and Tomatoes
This was great! I was in a hurry so used low sodium chicken broth. I also added onion, garlic, squash and celery and left the chicken out...the tortellini was filling enough! Added parmesan to the bowl...yummy! Thanks for sharing!
