About this Cook
I used to help my mom in the kitchen when I was little. When I became a teenager, I no longer found it to be exciting, although I still loved to bake. Becoming a mother myself has helped me rediscover the joys of cooking. My daughter is 3 and already enjoys being in the kitchen, let's just hope she's not as evil as I was in her teenage years:)
My favorite things to cook
I love to cook comfort foods. The smells that fill your house should be inviting and nostalgic. My favorite things to cook are Chicken and Cheese Burritos, Roasted Chicken with Stuffing and Potatoes, Cottage Pie, and Meatloaf.
My favorite family cooking traditions
When I bake, I always include my little one. She pours in the ingredients and I mix. She's always excited to see the finished product.

Creamy Avocado-Ranch Dip
I upped to 3 avocados and added minced garlic and a lot more hot sauce [and I don't even like spicy stuff but it made the flavor burst]. I will definitely make this again, and maybe even add to some burritos:)

Lemon Pie Bars
I doubled the filling, and it was super delicious!! I was nervous about the crust, because I've never made one, but it came out just fine. I didn't have a pastry cutter, so I had to combine the ingredients by pinching them together. I also forgot to add the flour to the filling. I used the lemon juice from a plastic lemon and didn't add zest, but everything worked out perfect. The thing that I love about this recipe is that i have all of the ingredients [minus lemon juice] right in my pantry!

Mango-licious Tilapia
Very delicious and satisfying. I pan seared my Tilapia and served it with the mango salsa on top. I also added extra avocado per my taste.
