Thanksgiving Leftover Casserole

This taste great, but the proportions are wrong, to me. There's way too much sauce and way too little turkey in the original recipe. l also left out the cheese. The sauce is quite tasty, though. I'd say half the sauce, triple the turkey (if you can), and there's no harm in more mashed potatoes.

The Most Incredible Garlic Bread

We didn't like the cream cheese base of this. It just didn't work with the other ingredients. I'm going to substitute margarine...

Chile Pork

This is excellent! I lessened the chili powder a bit because we're wimps here, and didn't have time to leave it in the refrigerator before cooking, but it's still incredibly flavorful. I put a little oil in the bottom of the casserole, as someone suggested, and definitely let it cook for the whole 2 hours. What a treat!

Cream of Tomato Soup

This was a big hit! I made it as written, with 1% milk. Next time I'll use low fat half & half to make it richer, but it was good as is. 9 year old son and 84 year old mother-in-law both loved it. Thanks for sharing!

Mexican Rice III

This was wonderful! I omitted the green pepper, used olive oil, and sauteed the onions after the rice was browned, then added the broth, etc. Added the cilentro just before serving. Maybe this isn't authentic Mexican, but it's like the restaurant Mexican rice I love. This is a keeper! Thanks for sharing this!

Creamed Chicken for Biscuits

This was a huge hit! I accidentally doubled or tripped the garlic powder, but I love garlic, so it didn't bother me. I had lots of leftover chicken, and this was a great way to use it. I'll remember it for next Thanksgiving, too...

Red Cabbage Salad

This makes quite a lot! I warmed pre-cooked bacon, blotted the grease and chopped it. We won't eat it in one sitting, so I added everything except the onions, divided into containers and I'm adding the onions just before serving each container, so they don't get limp. I think the key is using an Italian dressing you really like, as this provides most of the flavor. Great change-of-pace recipe!

Penne with Pancetta and Mushrooms

I used Italian sausage (because I had it) and this was wonderful. I added more cream (well, half & half) as others had suggested. This is a great basic recipe that lends itself to improvisation! Thanks!

Salmon in Creamy Silk Sauce

I'm not sure the parchment paper was worth all the trouble it gave me... Next time I'm using foil. The taste was good, though. I think the sauce needed salt, and mine was a bit too thin, but again, it tasted pretty good.

Thai-Style Peanut Sauce with Honey

I made this exactly as written, including the optional crunchy peanut butter, but went light on the spice, for the sake of my kids. WONDERFUL!! Peanutty, but with a nice kick. I'm using it with Vietnamese Spring Rolls, from this site.

Skillet Pork Chops with Potatoes and Onion

This was a big hit. I browned and cooked in an electric skillet, and had to make two layers of browned pork chops to feed everyone. It worked great. One change: I season the flour that went on the pork chops with Emeril's seasoned salt and pepper. The meat was tender, and the potatoes and onions had a nice flavor. This is a keeper!

Slow Cooker Pernil Pork

This is great! I had a boneless pork cutlets, rather than a roast, and they turned out very well. I was too lazy to shop for fresh oregano, so I used dried, and it was fine. This is a keeper.

Grilled Asian Chicken

This was excellent. I used boneless/skinless thighs, marinated for several hours, then baked them in the marinade in a 350 oven for about 20 minutes, so grilling time would be minimal--I find it hard not to overcook chicken on the grill... They looked grilled and tasted wonderful.

Slow Cooker Bean Casserole AKA Sweet Chili

This was a big hit. I had doubts about the molasses taste, and used a bit less, but it was quite tasty. I only had pre-cooked bacon on hand, so I chopped it and only cooked it a little to bring out the flavor, but it worked well. Also added chopped onion.

Spinach Pie V

I substituted one cup crumbled feta for one cup of the mozzarella cheese, which gave it a great flavor. The only problem I had was that the phyllo dough split open during baking, even when I used a triple layer of dough. I think I'll use more layers and lay the rolls next to each other in a smaller pan, so they support each other. Still, everybody raved about this, and even my kids ate it!

Sour Cream Chicken Enchiladas

This was excellent! I loved the sauce with all that cilantro. I had thin-sliced turkey on hand, and put it in a food processor with the onion to get a nice chop. Next time I might cook the onion to soften it a bit. Thanks--this one is a keeper!
