Rosemary Mashed Potatoes and Yams

This is my go-to mashed potatoes recipe for any big event. It's always a hit. I usually have people come up to me and say, "I don't usually like yams, but I loved this!"

Crab-Stuffed Catfish

Wow. I didn't expect this to be as delicious as it was. I added diced onion, garlic powder, and Worcestershire sauce to the crab filling, and sprinkled some lemon juice over the finished dish, which I think really added to the taste. My only gripe is that the fish was really hard to cut widthwise, but this was partially because my knives are pretty dull and partly because my fillet was very thin.

Pesto Polenta Lasagna

Very good. I did half mushroom/onion/spinach/artichoke heart, and half onion/spinach/zucchini/tomato sauce. My only gripe is that you end up with a ton of liquid and oil at the bottom of the pan unless you somehow drain the pesto and make sure your sauce is thick. I periodically took it out of the oven and held a spatula over the top (I made a single serving so this was possible) and drained the liquid off. The taste was amazing though.

Slow Cooker Beef Stew I

The taste was great, but it needed more broth and celery and less meat and potatoes. After quadrupling the broth, there was still barely enough. I added a little bit of red cooking wine to the meat along with the Worcestershire sauce.

Gingered Flank Steak

I was a bit disappointed. This is missing something- perhaps some vegetable or chicken broth (or even apple cider?) poured over the squash while it is in the oven for the last time.

Mustard Crusted Tilapia

Whole Wheat and Honey Pizza Dough

Good, not amazing. I will make it again because it's so good for you. I made a sixth of the recipe into a single serving pizza. Next time I'll put way more toppings on (I did half cheese and fresh basil, half cheese/pineapple/mushroom) to balance the breadiness.

Oatmeal and Wheat Flour Blueberry Pancakes

Good, but no pancake recipe worth its salt will tell you to beat the batter "until smooth." You should always leave pancake batter lumpy, unless you want flat, rubbery pancakes.

Baked French Fries I

Very good, but they need salt and pepper, this makes them much less bland. I baked them at 400 for about 45 minutes. If you want a healthier option, substitute some or all of the oil with egg white. It's not quite as good (maybe deserving of 4 stars rather than 5), but it's definitely still tasty. EDIT: I tried these in the pan this time rather than baking. Microwaved pre-cut red potatoes, skins on, for about 8 min on high with a bit of water and chopped fresh garlic, then sprayed with low-cal butter spray and cooked over medium heat for about 10 min. Just as good, and quicker.

Good taste, but it was pretty hard to get them to stick together. If you squeeze the patties out inside paper towels before putting them on the grill, that helps.

Apricot Lentil Soup

This is delicious! I only had green lentils, but it was still so amazing. I used 5 cups of water with vegetable bouillon and ended up adding about 1.5 additional cups of water after it simmered for 30 minutes. My only criticism is that this makes about 4 cups of soup total, so if you are feeding a family, you will need to double the recipe.

Balsamic-Glazed Salmon Fillets

Pretty good. The sauce thickened very quickly and became hard to spread, even on a low heat- next time, I would mix the liquids before putting them in the pan. I also liked the addition of lemon juice after it was done in the oven.

Banana Nut and Ginger Bread

I didn't notice any banana taste, but the overall taste was quite overpowering. It would be a good way to hide overripe bananas.
