About this Cook
My Greek stepmother loves to cook and taught me mostly everything I know. Her passion for food was passed onto me, although I'm not an expert, I seem to get many compliments on my meals. When I come home from work, my "winding down time" is to cook.
My favorite things to cook
I try to eat healthy by eating lean protein and vegetables for dinner. So I make chicken breasts, pork and fish quite a bit, always trying to "spice it up."
My favorite family cooking traditions
Being a mid-westerner, my family just loves casseroles of any kind. I love to make them because they're easy and are great leftovers. The smell always reminds me of grandma.
My cooking triumphs
I had an old friend over for dinner and was contemplating what to make. The dinner turned out fabulous; pork chops with a wine/mustard sauce, fresh green beans, and a couscous dish with fresh herbs, golden raisins and pine nuts. My mouth still waters thinking about it.
My cooking tragedies
I'm not into baking much. Most of my tragedies are bottom-burnt cookies or muffins. The only pie I can make is pumpkin and I usually burn the crust.

Taco Dip I
Excellent. Used hot & spicy taco seasoning and eliminated the black olives. Would be good with green onions on top! Wonderful.

Apple Oatmeal Crisp
Very good! I read reviews and used half the white sugar (1/4 cup) and it was delicious!

Quick Brown Rice and Mushroom Pilaf
Great recipe! My grocery store was out of Minute Brown Rice so I bought Success Boil-in-Bag, cut open 2 bags, and simmered for 10 minutes. Went well with my grilled kabobs.
