I'm a mom of two pre-school aged boys who love to snack. I work from a home office and am involved in many church activities.
My favorite things to cook
I love to bake - pretty much anything! Pies are my favorite and my specialty, but I also love making cookies, cakes, and candies.
My favorite family cooking traditions
My Grandmother makes a traditional English Christmas Pudding every year, and it's sensational. Just the smell of it brings back Christmas memories.
My cooking triumphs
Last year I baked pumpkin rolls for a craft show and sold out both days! Next year I'm baking ahead and filling the freezer!
My cooking tragedies
When we lived in Colorado, I never could adjust the things I baked for the altitude. My cakes always fell in the middle and my chocolate chip cookies were so flat that the chips stuck up out of them!

Broiled Tilapia Parmesan
This was an excellent and very easy recipe. My mom, who is not a fish eater, enjoyed it this way and said she would eat it again!

White Cheese Chicken Lasagna
This was a little bland...I would probably add lots of garlic and use fresh basil and oregano if I tried it again.

Soft Christmas Cookies
Very easy and basic. My boys enjoyed rolling it out and cutting shapes. If you roll them thick and DON'T OVERBAKE, they stay nice and soft. Good recipe!
