Grilled Pork Chops with Fresh Nectarine Salsa
This got rave reviews at my house. The chops were moist and very flavorful. I loved the salsa! We don't like cilantro in my house, so I added fresh parsley instead. This was a wonderfully easy dish to make. I served it with steamed asparagus and rice pilaf. It's definitely going into the rotation!

Turkey Pot Pie I
This was very good. The two men in my house raved! Instead of leftover turkey, I used chicken. I had boiled a whole chicken, and used half the meat for the pie. Instead of boullion, I used the chicken stock I just made, so I needed to add more salt. I thought there was too much oregano, so next time I'll use a little less, and add some poultry seasoning. And I should have added peas! It was very easy because I used Pillsbury pie crusts.

Corn and Zucchini Melody
I made this for the first time on Christmas day. I doubled the recipe to serve ten. The only change I made was to add salt. It was a huge hit! I barely had any leftovers. Even the picky ones ate some. I will make this recipe again, for sure. I like the idea of adding tomatoes, and garlic, or adding Italian or Mexican seasonings to accompany those kinds of entrees.
