Brown Sugar Pudding Cake

My family loved this! I was worried since one review stated the sauce never thickened but it came out perfect. I did alter my technique a bit from the recipe though. After mixing the butter and brown sugar I dumped the rest of the pudding ingredients in and mixed it up. Next I poured the pudding layer on the bottom and covered with the sauce. Like another rater I too melted the butter and mixed in the flour Before mixing it into the rest of the sauce ingredients. The pudding (which is more like a cake in my opinion) will float to the top while it bakes.

Maple-Mustard Country-Style Spareribs

My family loved these. I piled everything into the crock pot and cooked until tender. I reduced the liquid to make a glaze and put them on the grill for a few minutes and basted them with the glaze. The only thing I did different was to add a couple cloves of garlic. Yum!!

Greek Style Potatoes

These were so yummy! I left out the rosemary though since I can't stand it, but otherwise made it as is. Next time I would like to add some garlic and maybe a little dill. I never would have thought to put lemon juice with potatoes but it paired up quite well. I will most certainly be making these again!

Baked Oatmeal I

This was really good and the texture was SO much better than plain oatmeal, which I don't care for. The kids loved it as well, and they all like oatmeal. I baked mine right after mixing so I don't know how different the texture would be letting it sit overnight. I cut the calories way down by using applesauce & Splenda in place of the oil & sugar and also used skim milk. I left out the raisins and added about a half cup of chopped walnuts. Next time I want to add a chopped apple or two and a little more cinnamon but it is quite tasty as is.

Honey-Garlic Pork Ribs

These were so yummy! I marinated mine in a ziplock bag for a couple of hours and grilled them. They turned out really good but the grill flared up a lot and they were extra crispy. Next time I think I will pour half the marinade into the crock pot with the ribs to cook off some of the fat, then finish them up on the grill and baste them with the remaining marinade. The kids wanted extra BBQ sauce (of course) but hubby and I liked ours just the way they came off the grill.

Jay's Signature Pizza Crust

I give it 5 stars for taste and 3 for ease to work with, so an average of 4 stars. I upped the recipe to 20 servings so it would make 2 large pizzas. I also made mine in my bread machine. It mixed up well but the dough was very sticky and I ended up having to mix in quite a bit more flour to make it workable. Now I use 1 3/4 cups of water as opposed to the 2 cups called for in the 20 serving recipe and that helps. I have still had to add in a bit more flour but not nearly as much, I could probably cut back a bit more on the water. The crust is very tasty though so it makes it worth the extra stickiness.

Lemon-Cream Cheese Cupcakes

I cheated a bit an used a boxed lemon cake mix since that is what I had so I only made the frosting, but wow was it good! I also added a bit more lemon juice and added a few drops of yellow food coloring to make them look more lemony. I made the cupcakes for my daughter's class for snack and she said the kids all loved them. I really liked the frosting too, sweet and tangy like a glass of lemonade!

Rich Chocolate Frosting

Fudge-y, creamy, delicious! I scaled it back to 12 servings and was able to frost 26 cupcakes and still had about a cup of frosting left over. I used the Hershey's Special Dark Cocoa and it tastes like a brownie, EXACTLY what I was looking for. It is definitely for those who want their frosting to taste chocolaty and not just be brown.

These are very good and I will make them again but next time I will add some chocolate chips. I was looking for something with a little more chocolate taste. I added nuts and was going to add chocolate chips but when I looked for them I was all out.

Ranch Burgers

These were pretty good. I think maybe it could have used a bit more ranch seasoning and I only used 1 1/2 pounds of ground beef. Mine were a bit dry but I am certain it was because I left out the onions since I can't stand them. For those whose were mushy like meatloaf, you are probably overmixing them. I mixed the saltines with the ranch to help the mixing go a little faster. The burgers held up well on the grill, they didn't fall apart, and they weren't charred becuase of all the grease dripping from them. Thanks for the recipe!

Lemon Bread Pudding

Yummy! I doubled the recipe and used a 2 quart casserole dish, it only required an extra 5 minutes to bake. I did leave out the raisins since I don't care for them. The kids and the hubby gobbled it up.

Garlic Mashed Potatoes Secret Recipe

I scaled these down to 5 servings for my family of 6 and we barely ate half of them. They were just ok to my family. No one would eat them plain so I ended up making up a quick batch of country gravy to pour over the top. My husband and I didn't mind them this way but the kids still wouldn't touch them. This is something I would probably never make again.

Famous Butter Chicken

This was very good! It is a pretty good substitute for fried chicken. I did cut back on the butter, only using 1/4 cup, which I melted and drizzled over the top of the chicken before baking. I baked mine for the full 40 minutes and the chicken was still tender and juicy. I served with garlic mashed potatoes and white gravy, yummy!!

Pasta Carbonara

Mmmmmm and super easy to make! I did cut the butter down to a 1/4 cup and after I stirred the pasta into the sauce it thickened up quite a bit. Next time I might add another 1/4 cup of milk to the sauce to help thin it up a bit. Overall it had a wonderful flavor for being so simple and so few ingredients, it is very similar to an alfredo sauce. The hubby and kids loved it and gobbled it all up. Try sprinkling the top with some fresh parsley to brighten the flavor a bit and give it a little color. This is a keeper for our family!

Chicken Noodle Casserole

The family loved this! I didn't have any savory so I used a few pinches of parsley and a bit of thyme. I think it could have used a bit more of something, so next time I make it I will probably play around with the spices a bit. My hubby likes it as is, and the kids didn't complain. It does taste a lot like a chicken soup casserole. Very good!

Sunny Pancakes

I did enjoy these pancakes, but my kids and husband didn't care for them much. They do have a different texture than buttermilk pancakes, probably because mostly orange juice is used rather than milk or buttermilk, so I think that threw them off. The batter was very thin when I mixed it up but it seemed to thicken up at bit while it sat and was just the right consistancy when I was ready to pour them out on the pan. The kids didn't care much for the syrup either, which I thought was really yummy. I think next time I would add a bit more cornstarch though since I would have liked it a bit thicker. Next time I will stick with a buttermilk based pancake and add the zest and some orange extract. I think the kids might go for the orange sauce if they liked the pancakes I served it on. I would give the recipe 4 stars, the kids would probably give it 1, so I compromised and gave it 3.

Chinese Napa Cabbage Salad

Delicious! So easy to make. When I make this for my family I keep the almonds, noodles, and sesame seeds (I saute them along with the other ingredients) seperate so that they don't get soggy in leftovers and we just sprinkle them onto our individual servings. It's a big hit at potlucks as well.

Cinnamon Rolls III

YUM! These are great, super simple to make and the taste is wonderful. I made these the day before for our cub scout family camp and we brought them for breakfast the next morning, needless to say there were none left. One taste and we devoured them all. I did double the amount of filling as some reviews suggested and they turned out great. These have become a new family favorite!

Strawberry Shortcake

This was excellent shortcake! My mom always made it from Bisquick and I hated it because it was so hard and tasteless. This was so soft and flavorful. I only used 2 tsp. of baking soda as recommended by some of the other reviews, and about a 1/3 cup of sugar since I prefer mine sweet. I also used heavy cream in place of the milk since I didn't want the leftover cream sitting in the fridge. I baked mine in an 8X8 pan so I could cut it into squares and it worked great too. The kids loved it and so did I!
