Rosemary Roasted Turkey

Reviewed: Nov. 27, 2009
I've tried several methods for roasting turkey over the years (cooking bags, rubbing with butter or oil, using different herbs and seasonings) but this was by far the best. My search for the perfect Thanksgiving turkey recipe is over. Everyone at the table loved it. Thank you!

Potato Clam Chowder

Reviewed: Nov. 24, 2009
Excellent and easy; a definite keeper. The only thing I changed was that I used leftover cooked, cubed potatoes; I browned them with the onions and it was very tasty. I reduced the overall cooking time since the potatoes were already cooked. My only problem is that with 3 grown men to feed, there were no leftovers! This would serve 6 as a soup course, but as a main course (served with crusty bread and a salad) I wouldn't plan on getting more than 4 servings.

Risotto with Tomato, Corn and Basil

Reviewed: Oct. 5, 2009
This is a nice risotto, on the sweet side thanks to the wonderful addition of corn. I din't peel the tomato, just seeded and chopped it and added it in for the last few minutes. Next time I'll try substituting chicken broth for the water for a little more savory taste. Be sure to allow more cooking time than the recipe suggests; it took me about 50 minutes from start to finish. Don't add the liquid too quickly or cook it over very high heat to try to speed up the absorption of the liquid; risotto always takes a while, but it's worth it!

Spaghetti Pizza Lasagna

Excellent! Easy, flavorful. Served with a nice green salad and garlic bread, the entire family loved it. This is a nice change from our usual weekly spaghetti dinner. Thanks!

Tantalizing Turkey and Blue Cheese Meatballs

Reviewed: Nov. 15, 2008
The whole family loved these. Very, very tasty (and I'm not a big ground turkey fan). The only change I made was to use two whole eggs instead of separating the eggs. And the only complaint from my family was that I didn't make enough!

Red, White and Blue Slaw Salad

Reviewed: Jul. 21, 2008
Five stars are not enough! I'm not a cole slaw fan but I made it for DH who loved it... then the kids loved it... so I tried it, and now I love it too! I used an entire package of shredded cabbage, and Marzetti's Light slaw dressing, and followed the recipe just as it's written. I am now a convert to cole slaw, and I will use this recipe often. Thank you!

Key Lime Cookies I

Reviewed: Jul. 4, 2008
This is a great summer cookie recipe. I used key lime juice (easier than squeezing those itty bitty limes!) and the taste was a nice combination of sweet and tart. Don't worry if the dough is "sticky." I didn't try to roll them into balls, but just dropped them onto the cookie sheet using a teaspoon. They shaped up nicely as they baked. These are nice, soft cookies that will travel to a 4th of July picnic tonight. Thanks!

Lemon Seafood Risotto

Reviewed: Mar. 12, 2008
This is a wonderful, easy risotto. I only had cooked frozen shrimp on hand and, after thawing, I threw them in for the last few minutes to heat through. Otherwise I followed the recipe exactly, and it was a big hit with my family. Not too lemony at all, as some reviewers thought.

New England Clam Chowder I

Reviewed: Dec. 28, 2007
An excellent, easy clam chowder. I used frozen clams instead of canned, and added a bottle of clam juice to boost the flavor. The chowder tasted great and got rave reviews at my Christmas party. One thing, though: I followed another reviewer's advice and added mashed potato flakes to thicken the soup, but it got too potato-y. Next time I'll try cornstarch or flour if it's too thin. I will definitely make this again. Thanks for the recipe!

Sweet Grilled Peaches

Reviewed: Jul. 20, 2007
This is an easy and wonderful summer dessert! I added a tablespoon of melted butter and about 1/4 cup of brown sugar before I grilled the peaches, and it was perfect, served over vanilla ice cream. I would certainly serve this to guests at a summer cookout! Thanks for a great recipe. It's a keeper!

Grilled Salmon II

Reviewed: Jul. 6, 2007
This marinade is wonderful! I tossed a few dozen jumbo shrimp in with the fish, then before grilling, I threaded them on skewers. Both the salmon and shrimp had great flavor, and received raves all round the table. If I could give this one more than five stars, I would. I will definitely be making this again... the family insists! Thanks for the recipe!

Jamie's Cranberry Spinach Salad

Reviewed: May 30, 2007
This salad was a hit at our sports banquet. I served it with feta cheese on the side, for folks who may not care for it. Also, I used spring mix instead of spinach; I think it would be great either way. I will make the dressing and keep it on hand for frequent use. Thanks for a great recipe!

Egg Salad Sandwiches

Reviewed: Apr. 13, 2007
This was great! I used light mayo, otherwise followed the recipe to the letter. I tasted it immediately after putting it together and wasn't too impressed, but after refrigerating overnight, the flavors really came together. I like lots of onion, but if you're not a big fan, you might want to cut back on the amount. This will be my go-to recipe for all of those leftover Easter eggs. Thanks!

Slow Cooker Ham

Reviewed: Mar. 24, 2007
This was a huge hit! It was the easiest ham I've ever prepared, and the tastiest too. Juicy and tender... yum! It's the only way I'll cook ham, from now on. Thanks for a great recipe.

Cheesy Sausage Loaf

Reviewed: Feb. 27, 2007
This was an instant hit in our home. It's tough to get my 16-year-old to take a moment for breakfast, but he stops in his tracks as soon as he sees this loaf on the table. I could probably do this with frozen dough, but I enjoy the breadmaking. The only thing I change is to add more meat, about 1.5 pounds sausage total, and place slices of provolone on the dough before topping with the meat/cheese mixture. Mmmmmm! Thanks for a great recipe!

Seafood Strata with Pesto

Reviewed: Dec. 30, 2006
We served this strata for Christmas brunch, and unfortunately, it didn't go over too well. There were a LOT of steps to prepare the dish; it took longer than I expected to put it together. The taste was just okay; it seemed to be missing something, but I don't know what since there are so many ingredients already in it. I really wanted to like this; sorry.

Creme Brulee French Toast

Reviewed: Aug. 28, 2006
This was wonderful! The only thing I changed was to cube the bread before placing in the casserole, for ease of serving. Everyone loved it! It is so sweet, no maple syrup was needed. Definitely a "keeper".

Autumn Cheesecake

Reviewed: Dec. 22, 2005
A wonderful cheesecake! I usually make cheesecakes for special occasions and have a collection of favorite recipes. This is about the best. I doubled the filling, as some suggested, and increased the cooking time to 90 minutes total. For a topping, I used the crust recipe, but only needed half the amount of ingredients. The cheesecake was great, even though I forgot to serve the caramel sauce with it. No one noticed anything missing, and I had numerous requests for the recipe. I will definitely make this one again!
