Avocado Feta Salsa

I have made this many times to take to parties and get-togethers, and people tell me every time how much they love it. I use cilantro instead of parsley, but everything else is the same. It's delish!!

Winter Fruit Salad with Lemon Poppyseed Dressing

This salad was just OK - I didn't like the way the dressing tasted at all - much too sweet. I used a poppyseed dressing from Trader Joe's that was great. Also didn't think the Swiss cheese added much flavor.

Missy's Candied Walnut Gorgonzola Salad

This salad is great. I've usually bought candied nuts to put into my salads before, but this is the first time I've made them - I never knew it was so easy! I used pecans instead of walnuts, as I like them better. Everyone loves this salad!

Roasted Portobello Mushrooms with Blue Cheese

These were OK, but the juice from the mushrooms (I used small portabellos), combined with the soy, made quite a mess on my baking sheets. I used paper towels to soak up the liquid before putting the cheese on. They tasted all right, but not worth the mess.

Russian Cabbage Borscht

For the first time, I made an "all Russian" dinner in honor of my son who we adopted from Russia 7 yrs ago. This borscht was definitely the best dish - it got rave reviews from everyone! I wouldn't change a thing, and I will definitely make again!
