Spaghetti Sauce II

Delicious! I didn't feel like shopping, so I looked for a spaghetti sauce to match the ingredients I had on hand, and this was the closest. The only change my cupboard demanded that I make was to use a 14 oz. can of diced tomatoes and a 14 oz. can of tomato sauce instead of the paste. And it turned out great! I was also short on time and simmered it for just over two hours instead of three which didn't seem to be a problem. I threw in some frozen meatballs during the last 30 minutes and of course topped it with freshly grated parmesan cheese. My husband loved it and even got some more to dip his garlic toast in. Thanks for a yummy, easy spaghetti sauce recipe. I guess I've doomed myself to cooking it from scratch from now on!

Green Chutney

I served this with a beef curry dish along with Indian spiced cabbage and chickpea curry. It complemented all three wonderfully! The brilliant green color also dressed up the plate. Thanks for a unique way of adding cilantro to an Indian dinner!

Beef Spinach Hot Dish

Yummy! Creamy, rich taste. I kept sneaking back into the kitchen for more little bites after dinner was over. Also tasted great heated in the microwave the next day. I used fresh mushrooms but otherwise followed the recipe exactly.

Wonderful tasting recipe, but it was swimming in olive oil. I would not change a single thing as the flavors were just right, but next time I'll try brushing the eggplant with the olive oil and broiling each side as suggested by others. Very delicious!

Christmas Snack Mix

Yum! I also used dried cranberries instead of the wheat nuts. In place of chocolate covered peanuts, I found cocoa covered peanuts which provided a nice contrast to the red and green M&Ms. This made a lot. I was able to give away three bags in gift food baskets and still keep a bowl for ourselves. Thanks for the easy, colorful Christmas snack!

Easy Apple Cider

The wonderful aroma greeted my chilled-to-the-bone guests wonderfully (they were returning from a very cold viewing of our town's Christmas parade), but it was a bit sweet. The adults loved it; the children were not impressed. Still, this is a keeper because it is so easy to make. I'll just cut down on the sugar next time. Thank you for an easy way to bring Christmas cheer to the home!

Cranberry Orange Loaf

Very good bread. I used walnuts instead of pecans and lemon zest instead of orange zest simply because that is what I had on hand. I cut about a third of the cranberries in half just to experiment, but the whole ones didn't seem to turn out too tart anyway. We enjoyed the bread more the next day after storing it in the refrigerator. Will definitely make again. Thanks!

Spicy Cranberry Chutney

Wonderful, very tart cranberry chutney and much better than the plain canned version! Crystallized ginger was not available, but one teaspoon of ground ginger is a more than adequate substitute. This made enough to also fill a half pint jar and present to a friend who had invited us to dinner. It is great with ham!

Slow Cooker Beef Stroganoff I

Excellent stroganoff. I doubled the recipe to provide enough for leftovers but a neighbor who joined us for the meal had FOUR huge servings, so there was none left! I did add fresh sliced mushrooms and half a cup of sour cream with the cream cheese. Make sure the cream cheese is softened before adding it (I forgot to), or little tiny white lumps will appear, nearly impossible to get rid of. Thanks for the great recipe!

Sauerkraut-Stuffed Slow-Cooked Pork Roast

Easy and very good. It tasted delicious served with potato pancakes topped with sour cream and apples cooked in brown sugar and butter. I shredded the leftover pork the next day, heated it up with some barbeque sauce, and served it open-faced on top thickly sliced and toasted French bread. Yummy!

Cuban Beef Stew

Very tasty stew. I used a full cup of dry sherry and golden raisins instead of the dark ones. I also doubled the cumin amount, the green olives, and the capers. We had large bakery fresh rolls on the side. My husband and I really appreciated the unique flavor, such a welcome change from old-fashioned beef stew!

Linda's Lasagna

Very good lasagna. I liked using beef instead of ground pork sausage. It made alot for just three people, so I was able to freeze the remaining two-thirds into two future dinners. I used the basil/olive oil flavored 14.5 oz. can of diced tomatoes, and I added a couple of teaspons of dried basil. I also used fresh minced garlic (two). Instead of three strips of lasagna noodles for each layer, I used four. And, I substituted Ricotta for the cottage cheese. Putting the mozzarella on top during the last 15 minutes of cooking was perfect! Thanks for a great family recipe!

Chicken Enchilada Casserole II

We just had this tonight, and I'm stuffed! This is a very creamy, rich casserole, and I followed the instructions exactly, except I didn't cut the flour tortilla into strips, just placed them in whole. I also sprinkled fresh cilantro on top the servings. Lots of leftovers, so we'll be eating this tomorrow night too! Easy and tasty.

Broccoli Slaw

Oh my, shelling the pistachios sure took a long time, BUT it was worth it! This is a great salad. I served it at a large backyard party we gave, and everyone loved it! I love serving dishes with unexpected ingredients, in this case the pistachios and cranberries. I was also able to make this the day before adding only the pistachios just before serving to keep them crunchy. I used Marie Calandar's cole slaw dressing. What a great side to grilled meat on a summer day! Thanks!

Asian Coleslaw

I took this to a BBQ potluck occasion, and I didn't see everyone's reaction, but the bowl was empty when I packed up to go home! The dressing is outstanding. I used crunchy peanut butter in it, and I put it in a jar and mixed it into the salad when I arrived. I also used a bag of prepared coleslaw, a bag of broccoli slaw, and a bag of shredded carrots with the other ingredients. Very tasty. Thanks for a good one!

I was amazed at how the liquid mess I had created in my blender froze into a very ice cream-like consistency! I doubled the recipe, using two cans of sweetened condensed milk, two cans of evaporated milk, and four slices of soft Wonder bread. I also used six drops of yellow food coloring with two drops of red to create a light orange color. I'm already imagining how this will taste with some fruit or other goodie thrown in (maybe mango or raspberries or even coconut or nuts. Thanks for a great, unique dessert after a spicy Indian meal!

Chickpea Curry

Wonderful side dish for an Indian-themed dinner! I followed the suggestions of other reviewers and drained the chickpeas while adding a 14.5 oz. can of diced tomatoes, undrained. I also used ground cinnamon and ground cloves. Be sure to stir in the cilantro just before serving and to save some to sprinkle on top. The cayenne pepper made it spicy hot but not too much so- be adventurous and leave it in. Indian food has to have a nice bite to it! Serve some raita on the side to cool the palate if needed. Thanks for one of the best ways to cooking chickpeas I've experienced!

Mango Chutney Cheese Ball

Wow! Delicious! And a beautiful presentation too! I made this for an Indian dinner night with friends, and it sure was a winner. Its unique fruity flavor would make it a nice appetizer during the Christmas season as well. I used two 8-ounce packages of cream cheese, one bunch of green onions, the 2.1 oz. pkg. of pre-cooked bacon, and an extra 1/4 cup of golden raisins. For the crackers, I used plain pita chips. Serve this before your next dinner party, and your guests will rave!

Beef Samosas

Fantastic filling for samosas! I followed the recipe exactly except I left out the green pepper chiles (didn't have any), and I used Won Ton wrappers brushed with butter and baked in the oven at 400 degrees. I wasn't satisfied with the Won Ton wrappers in the oven, and I look forward to taking a stab and making my own dough next time- the filling was just that excellent! I also read somewhere that you can take leftover filling and make small patties to fry just as you would leftover mashed potatoes. Be sure to have a nice spicy chutney on the side to dip the samosas in. By the way,they taste yummy cold too!
