Hot Mexican Spinach Dip

This was a LOT thicker than I was hoping for. Still it was ok. Would try again with hot salsa. Would love to get it to a thinner consistency.

Tomato-Cream Sauce for Pasta

Well, I was really excited to make this, but it just didn't turn out how I expected. I think one attributing factor is that I must have chosen too big of an onion. I think I will try this again, but definitely with less onion. It looks great in the picture, but what I ended up with was a very thin and oily sauce. I think I will run the leftover through my food processor and add some jarred sauce to it and it will be quite good.

Stuffed Chicken Valentino

Really good and super easy! I forgot to pick up the peppers, which is obviously key to the dish, but I sprinkled a generous amount of Mrs. Dash's Southwest Seasoning to give it a little spice.

Double Tomato Bruschetta

This was really really good!! I made the tomato mixture the night before so all the flavors marinated together overnight. I baked a loaf of Coles's garlic bread and when it was almost done I took it out of the oven and topped with the tomato mixture and cheese before putting back in the oven on broil until the cheese melted. I had bruschetta once like this at a restaurant and it was so good! Only thing was though that the bread got a little soggy under the tomatoes. Maybe next time I will broil the bread for a few minutes before adding tomatoes. Still great though, everyone was surprised that I really made it myself!

Monday Night Hot Wing Dip

This dip is really really good. I may have used too much chicken because it was probably thicker than it should have been, and therefore really did not look appetizing at all. However, it really does taste amazing! Didn't reheat well for me, but again I think it was just because the dip was so thick. Will be making again soon for sure!

Spinach Dip II

This was really good...but I had one problem...no idea what bechamel sauce is. Apparently I am not that experienced of a cook. I assumed you could just buy it at the grocery store and no wonder everyone there looked at me like I was crazy when I asked if they knew what it was, because I came home and googled it and I guess you have to actually make it with milk, flour, and some other ingredients. I bought frozen spinach in a cream sauce and just did w/o the bechamel. It was really good still...just really thick. I mixed in some alfredo sauce I had in the fridge which didn't really change the consistency much but seemed to bring out more flavor. Good, but not as easy as it seems b/c you have to make the bechamel. Is there another way to do this w/o making the sauce?

Sooo good!! Sauce was a little thin, but I think I just didn't let it simmer long enough. I grated fresh romano and put lots on top, will be making this again soon!!!

Noodles Alfredo

This is pretty good...I actually didn't have any fresh parmesean cheese, and from past experience I didn't want to use the grated kind in the can. It just does not melt well...too grainy. So I thought I would experiment and try shredded mexican cheese. It was actually not bad...I used spaghetti noodles, and sprinkled on some garlic and herb seasoning and a little crushed red pepper. Didn't use parsley, but sprinkled with grated parmesean when it was done. Pretty good for something different!

To Die For Fettuccine Alfredo

This was fantastic!! I made a few changes...we didn't have any Romano or Parmesean that I could grate fresh. I had about 1/2 a cup of shredded parmesan(the kind that just comes in a bag), and then added almost a cup of Parmesean Romano that comes in the can. And I was afraid that wouldn't be as good, but it was! I also cooked some broccoli and mixed it in. Then I put it in a casserole dish and put shredded Cheddar Jack cheese on top and baked it....and it was FANTASTIC! I tried to copy my favorite dish from Ruby Tuesday and it was actually pretty close...I just made it w/o chicken, b/c I am a college student and that is just too much work for me. I really enjoyed this recipe...thanks so much!

Chicken in Creamy Tomato Sauce with Linguine

I had been putting off making this recipe for awhile, although I saved it, because I just wasn't so sure about it. I finally made it tonight and it was really good!! I made it without the chicken and put lots of parmesean romano cheese on top! I really like it a lot and will make it again soon!!

This is a great recipe! I do wish I would have read through the reviews before making b/c it was thinner than I would have liked and could use some more broccoli. I followed the recipe exact but will add more broccoli next time. Will definately make this again and again!

Albino Pasta

This is really good! I made it with bow tie pasta and I didn't have fresh parmesean and didn't want to use the canned kind...so I used fresh Pecorino Romano (and a lot of it)and it was great. Also sprinkled on some dry minced garlic and roasted garlic flakes. Very good.
