Amish Breakfast Casserole
Made this for Mother's day brunch. Everyone loved it! This will be the egg casserole I make from now on. I placed the hash browns on the bottom of the pan, added a little salt and pepper, then covered the hashbrowns with slices of co-jack cheese then toped with the egg mixture. I cooked for 50 minutes because it didn't look set yet at 40 min. I didn't add anything to it, it was perfect with the bacon and onion, not too heavy. I left out the swiss cheese and added Mozzarella.

I added a little milk at the end because it seemed dry. I used whole wheat wide egg noodles. My little kids did like this recipe. I thought it lacked flavor.

Healing Cabbage Soup
I was not expecting to like this soup at all. I just finished my 3rd bowl. I used a can of Diced tomatoes with zesty mild green chilies, Perfect! I also followed other suggestions of adding carrots & celery, chicken broth & just a cup of water. I chopped half of the cabbage, then placed the remainder in the blender to thicken the soup a little. This soup was a hit!
