Butter Cookies V

These are good but based on the reviews I expected them to taste like the store-bought refrigerator cookies. They taste more like Christmas cut-out cookies. I wanted chewy but these were very crisp. Good but not what I expected.

Aunt Teen's Creamy Chocolate Fudge

I've made a lot of fudge and this one had such good reviews I thought I'd try it to compare. It was dry and crumbly, and tasted like a dried out, sugary version of the chocolate I used to make it. I was very disappointed, and I can make other fudge that takes less time and has a much better consistency and taste.

Sarah's Banana Bread Muffins

Recommended. THESE SMELL AMAZING WHEN YOU BAKE THEM. My boyfriend really liked these because they weren't "as banana-y" as my usual recipe. Based on users' suggestions and my own tastes, I used 1/2 cup sugar and 1/4 cup brown sugar. I used 1 and 1/2 cup whole wheat flour and 1/2 cup white. I didn't use coconut and threw in more walnuts. The tops came out crunchy and the insides were moist and flavorful. I will definitely make this again!

These were not good. They tasted like flavorless bread, not pancakes. I even put chocolate chips in them, which made them slightly better.

Chocolate Chocolate Chip Cookies I

So delicious and chocolatey. I like crispy cookies so I had to bake them about twice as long, they definitely were still raw on the inside at 10 minutes. I also used all butter (no shortening) so they really spread out. But if you're a chocolate lover these really hit the spot!

Mozzarella Mushroom Chicken

We thought this was bland. The mushrooms didn't stand out enough, and the cheese stuck to the mushrooms and made the whole top slide off in 1 big chunk with every bite.

Quinoa and Black Beans

Delicious! I changed it a lot, but still a great starting point. I halved the recipe but used 1/2 cup quinoa and 1 cup chicken broth. I didn't have garlic or cayenne so I used about 1/2 t Emeril's Essence and a dash of red pepper flakes. I steamed 3 diced carrots and added at the end with the corn. I also added cut up vegetarian chicken nuggets and mixed them in my portion for more protein. Amazing, well-rounded meal!

Roasted Chicken with Risotto and Caramelized Onions

This was amazing, my boyfriend told me it was the best thing I ever made. Definitely start the rice at the same time as the onions, it took me 2 hours start to finish. I reduced the amount of vinegar to 1/4 cup and it was still a strong flavor. I added frozen yellow corn to the last cup of broth, and added about a teaspoon of TRUFFLE OIL when I added the butter. Omitted the thyme. Delicious!

Salsa Chicken

So good! I didn't even follow the recipe, I just added seasonings and salsa to taste and it was delicious and easy. I mixed frozen corn with brown rice and a little Emeril's essence, put the salsa chicken on that, and topped with cheese and sour cream. Next time I'll try it with black beans mixed in the rice. It's good cold too, we ate it for lunch the next day!

Black Bean Chili

Great base. I used canned diced tomatoes instead of fresh, 1 can garbanzos and 1 can black beans, omitted the mushrooms, added frozen corn and fresh coined carrots, and once at the end I added browned ground turkey. It would be delicious with anything you add to it! The mushrooms just don't add much to it, they're not needed. And I love a lot of veggies.
