Chantal's New York Cheesecake

The crust definitely needs about two to three times more butter to make it crusty. I was so afraid to overmix my batter because of all the warnings against it, that I must not have mixed it enough and it didn't set in the middle. I cooked it for an hour at 350 and let it sit in the closed oven for 5 hours, then chilled it, and it still was gooey in the middle. AND it cracked! I'm going to try it again to see if I can make it better.***EDIT***I chilled it for a full 24 hours and it was like a different cake. Besides the crust needing more butter, this was PERFECT! I also took about 3/4 cup of the batter out and added melted chocolate to swirl through. It looked wonderful (except the cracks) and tasted amazing!

Simple Delicious Pasta Sauce

I only used 2 garlic cloves, and added Italian seasoning as others suggested. I also used a potato masher to break the tomatoes down into more of a saucy consistency. I added a little chicken broth and reduced the sauce to make it thicker, and threw in a little sugar because I like a sweeter sauce. It was delicious!

Burnt Butter Rice

Yum! This is a great way to make rice. I used brown rice and had to cook it longer, but otherwise followed the recipe exactly. The burnt butter really adds a lot of flavor. It is a little greasy but in a good way!

Classic Chicken Noodle Soup

The base is great, but this recipe makes so much, and once I added the noodles, the leftovers were mush. I would recommend cooking the noodles separately and adding them to your bowl of soup. But other than the mushy noodles this soup is great!

Fast Chicken Soup Base

This was good and easy. I only used one onion since I'm not a big fan. And after I added the thyme I thought it was too strong so I skimmed most of it out. Otherwise, it made a great soup base.

Chris' Kraut

Wow! I love traditional sauerkraut, but this recipe kicks it up a notch. I'm not one of those who loves bacon in everything, but it makes this dish. I used brown sugar to deepen the color, and I bought brown sugar cured bacon. I simmered it for about 40 minutes on the stove and added water as needed, but some of the bacon on the bottom got a little caramelized which really sent it over the top. I added about a tbsp of apple cider vinegar at the end just to balance out the sweet. BF and I loved it! Even better the next day!

Challah I

It may have been because I had just enough flour for 8 cups, and any remainder I had to add for stickyness, I used whole wheat (that's all I had). But it just tasted like really bad bread. It was nothing like challah, and the flavor was awful.

Chicken Marsala

This is a winner! I've tried to make chicken marsala before to no avail, and this was easy. I followed some advice and didn't add sherry, but I didn't add flour to the wine and it was rather thin. I just used plain old white mushrooms, grocery store-purchased Marsala and threw in a pinch of sugar with the wine because I like my marsala sweet. This is a new favorite!

Chicken Souiza Cornbread Bake

I cooked 5 slices of bacon well done, cooked the onions and garlic in the bacon grease, and broke up the bacon and mixed it in with the chicken. I didn't have chiles so I roasted a red pepper and mixed in some red pepper flakes for heat. I did drain the corn, but the cornbread was still soggy. This tasted good (especially if you like bacon and corn) but didn't care for the sogginess. Next time I may omit the sour cream and mix the chicken and peppers right into the cornbread.

Sweet Corn Tomalito

WOW! This is so good! I never had the stuff at Chevy's but it reminds me of the tamales at Cheesecake Factory. I drizzled some sour cream on top after scooping it out. It tastes like cornbread pudding. It takes over an hour but it's not constant labor... you just let it sit on the stove. No biggie. IT'S WORTH IT!!

Sarah's Applesauce

SOOO good! It's delicious and so easy. I used apples I had around, 1 red delicious and 3 Fuji. I kept the peels on, which ads a pretty color, a little crunch and a lot more insoluble fiber. I used a about 1/8 cup sugar figuring I could add more later, and it was perfect. I didn't have cinnamon, so I used pumpkin pie spice. The spice with nutmeg, cloves and cinnamon made it well-rounded. And it smells AMAZING when it's cooking. I'll never buy jarred applesauce again!

Pico de Gallo Chicken Quesadillas

These were really good, needed more cheese though. I used shredded white meat from a rotisserie chicken, and followed the recipe exactly otherwise. It was really tasty but not quite what I was expecting based on the reviews.

Chicken and Mushroom Saute

**Edit- I made it with mashed potatoes, it's a whole new dish! YUM!!**Good basic recipe. I too added chopped onions with the mushrooms, and added some seasoned salt to the flour, and then some to the sauce. I also used chicken broth instead of water. I'll definitely make it again, next time I'll serve it over mashed potatoes. My boyfriend said he's already looking forward to the leftovers for lunch tomorrow!

Italian Dressing Mix

Good start. I didn't have celery salt or garlic salt, but only the powders. So I added only the 2 Tb salt, and a teaspoon seasoned salt for zip. I also used olive oil. Other than that I followed the recipe and it was great!

BBQ Chicken Calzones

AMAZING! My BF said it was one of the best dinners I ever made. The bacon makes it. We bought pizza dough from our favorite pizza place and I measured out 10 oz. and rolled it. I bought a honey rotisserie chicken and pulled it apart. I only used half the cheese. I think with my leftover ingredients tomorrow I'll make small handheld pockets. The filling would be great on small toasts for hors'dourves, too. Thank you Tummy13 for this recipe!

Spanish Rice II

YUM! Better than the boxed Mexican/Spanish rice. I also used chicken broth instead of water, I used brown rice, 1 clove of fresh garlic, and 1/2 teaspoon of cumin. It's so delicious! I topped it with chopped cilantro and ate it with canned black beans and crunchy turkey tacos. This is my new rice recipe, love it!

Homesteader Cornbread

I read the reviews and thought it might be a little dry, so I added 3 tablespoons cream cheese to the milk and blended it. I also dotted it with butter on top half way through cooking. I will definitely make this again. It is dry without butter on it but I'm going to keep working on it. It turned out beautifully in photos!

Chanterelle Risotto

Yummy! Great base but I added a lot. I used chicken broth and needed 2 more cups of broth to fully cook the rice. I added thyme, and used 1 cup sliced baby bellas. To replicate our favorite risotto from a French diner, I added about a 1/2 cup corn right at the end, and about a quarter cup chopped walnuts! Topped with a little truffle oil...bon appetit!

Baked Ziti I

I followed this recipe exactly except like others, I layered the sauce directly on the pasta. Next time I think I'll substitute the sour cream for ricotta. I don't think the sour cream adds much, it looks like ricotta but doesn't have that cheesey texture. I also had to bake mine for 40 minutes and put it under the broiler for a few minutes to make the cheese golden brown. I'll definitely make this again with modifications!

Great Garlic Bread

YUM!! I used fresh garlic, whole wheat french loaf, and a dash of salt. I saturated the bread with butter, and only put parmesan instead of mozzarella. It was delicious! I'll use this recipe every time I make garlic bread!
