Baked Potato Soup
delicious & easy to make. I altered the recipe to fit what I had on hand, though...I used olive oil to saute the onion & garlic, used the 3 T of flour, 2 baked potatoes + 1 lb. chopped, steamed cauliflower. I ended up using about 6 or 7 cups of chicken broth & 1/2 C of the half & half and the recipe was plenty thick. I did puree the soup (before adding the 1/2 & 1/2) with an immersion blender because my family likes a creamy soup (didn't want to draw attention to the cauliflower either).

Chicken with Chipotle
great recipe with just a few ingredients. Used bonesless, skinless chicken breasts, cooked in skillet while I prepared the sauce. Used 3 chiles with the seeds scraped out - a bit of a kick, but the kids loved it. I used a half cup of evaporated skim milk & 1/2 cup of 1 % milk. Also used lowfat sour cream. Finished the chicken while simmering the sauce. Quick, easy, delicious.

Turkey Breast with Gravy
What a great recipe! I had never made gravy before & I was surprised that it was so easy.
