Sour Cream Banana Coffee Cake
I doubled the recipe, used 3 bananas and added cinnamon baking chips to the nuts/sugar/cinnamon mixture. The coffee cake came out moist and great tasting. It would be good with chocolate chips too but I didn't have any in the cupboard.

Surprise Banana Cake
I too added the tesp. of soda as suggested. Also I used Splenda instead of sugar. I made the recipe into cupcakes and they were wonderful. Nice, easy, delicious.

Zucchini Bread IV
I used a cup of unsweetened applesauce instead of oil, Splenda instead of sugar and pumpkin pie spice instead of cinnamon. Bread turned out wonderful. This recipe is a keeper.
