Addictive Sweet Potato Burritos

I was very skeptical before I made this recipe. I simply couldn't imagine that the list of ingredients would work well together. Well, I was pleasantly surprised. This recipe is very good. One thing I would do differently is use small tortillas. These burritos are very filling, and I could barely get through one large burrito. If you have leftovers, no problem, they freeze beautifully!

Chocolate Press Cookies

I give it three stars, because without some changes they don't work out. I followed the advice of previous posters. I used 2 eggs, 2 tablespoons of milk and a teaspoon of vanilla. They were spectacular! They really do taste like brownies. I would recommend trying this recipe BUT only with the changes previously mentioned.

Homemade Fresh Pumpkin Pie

This is an "OK" recipe. The seasoning was just perfect for my family; we don't like it very spicy. I do take issue with the texture. It was not the normal "custardly" texture I expect in a pumpkin pie. It seemed like a firm pudding. I think I will keep looking for a recipe that has the right texture and flavor.

Irish-Style Lamb Stew

Amazing!Everyone in the family loved this recipe! I used the pressure cooker because I was short on time. It was absolutely perfect! Succelent chunks of lamb in an outstanding stew!

Tacos in Pasta Shells

I had tacos in pasta shells years ago when a friend made it. Her recipe was amazing. I lost the recipe and have been looking for a replacement ever since. This was "OK". I made it as is and it just seemed to be missing something. Next time I attempt this recipe, I think I will add way more toppings and work on the filling.

Belles Hamburger Buns

This a nice hamburger bun recipe. My family and I really enjoyed it. I have read many of the reviews and think I can offer some help to those who are stuggling. You will have a very dense bun if you add too much flour. When you are adding the last two cups of flour, add them in a little at a time. When the dough starts to pull away from the bowl and is not so sticky that you have a sticky "pool" of it at the base of your bowl, you have the right amount of flour. It will still be a little sticky, but you will have a very light dough. If you find that your dough isn't rising well, there are a couple things you can do. First, check your yeast and make sure it is still good. You can do this by adding some yeast to warm water and adding a little flour or sugar. Leave it for about 10 minutes. At this point, it should be frothy or creamy looking. If it doesn't do anything, you need new yeast. Another thing you could do is switch flours to bread flour. It has a higher gluten content, and it should do better in the rising phase. If you wish to make the recipe with 100% whole wheat flour add a little gluten flour; a tablespoon for every cup of flour. I use this for making a 100% whole wheat breads with freshly ground wheat. It will help your dough rise. I hope this helps someone. :)

Strawberry Ice Cream

This is very good if you want a basic, lovely strawberry ice cream recipe. I love to make ice cream and have been making it for many years. The only thing I would say is that you will need to stir your custard as it is heating. Remember to not let it boil! If you do not stir, your yolk will not properly incorporate and you will get cooked egg lumps. I imagine this is why she added the seive step. You will not need to draw it through a seive if you stir and keep the ingredients together. It will not take 5 minutes when you continually stir it. It is probably closer to about 15 to 20 before it coats the back of a spoon. It will give you a nice creamy texture and the ice cream will be very smooth. I promise! :) I also added fresh cut strawberries to the mixture at the last five minutes of my ice cream machine's cycle.

Graham Cracker Brownies

I have been making these as long as I can remember. My grandmother had a similar recipe. This version is only different in that it uses baking powder, I imagine you could safely leave that out, since my version has never had it in it. It is a very rich "brownie" with a very chewy texture. If you find it "doughy", you have undercooked it. You can add flavorings via extracts or you can add some pecans or other favorite nuts. I WOULD NOT RECOMMEND adding anything like marshmallows into the batch or more chocolate chips. It WILL ruin the mixture. Another thing I found peculiar was the toothpick test. I have never found this to be accurate with this recipe. It just doesn't work. It doesn't work, because the "brownies" only harden as they cool. You could cook them for hours and never loose the "goo". Just follow the cooking times. The brownies form a lovely golden crust as they are cooking. Make sure you cook them the whole time, even if you see that lovely golden crust. If you skimp on the time, they will be undercooked on the bottom. I would highly recommend trying these, they are divine! Hope these tips help someone. ***I noted some are still having trouble with the recipe. I reread the recipe and realized there is no mention of a size of pan. It works best in a 9x13 for 20 - 25 min. The brownies should not exceed an inch 1/2 in height. They will never work out if they exceed an inch and 1/2.****

French Toast Souffle

I am giving it 4 stars because it is a very nice basic recipe. However, I have made some changes because I felt it needed "something". After trying it exactly as the recipe suggested, I made it again with a few changes. I used an italian bread (I have tried it with challah too- yummy!) I took frozen berries and sprinkled them with a little sugar (to taste really). I put the berries in a small saucepan and let them reduce into a yummy sauce. I then drizzled that sauce on the souffle after it came out of the oven. You may wish to add fresh berries after you drizzle the sauce. I used this instead of using maple syrup. I served it to a friend who said it was divine.

Buttery Soft Pretzels

Excellent recipe! My children and I made 3 batches in 3 days! They had so much fun making them that they invited friends over to make them. We consistently made one change, per previous reviewers suggestions we adjusted the amount of flour to 4 cups. It was the perfect amount. I would adjust the sugar amount depending on what you want to do with them. If you want a sweet pretzel, keep it as is, if you want it more savory cut the amount in half. I have added cinnamon and raisins to the dough and it was delicious. I imagine the possibilities are endless. Incidentally, don't skip the baking soda step. It is what gives the exterior a nice chewy texture.
