Navy Bean Soup II

Good soup. Will make again. Really easy with only 4 ingredients. I had no tomato sauce on hand so I used 1 jar (maybe 16oz) of my home-canned marinara sauce. One caution: in my experience, no matter what the cooking method, Dutch oven or Crockpot, you need to soak those beans overnight - unless they are the no-soaking kind. I wholeheartedly recommend this recipe.

Persimmon Bread II

This is a nice bread, nice and moist, nice texture, but the star ingredient could be anything because you sure can't taste the persimmon. I used finely chopped pecans instead of walnuts. I quadrupled the recipe to give away as Christmas presents, and in so doing reduced the egg count by two. I find that beating the batter in my KitchenAid stand mixer really well, makes for a such a creamy batter that I can reduce the egg count slightly with no reduction in quality.

Danish Kringle

What a good recipe - and so easy - for any time of year! Made the dough last night; shaped and baked it this morning. I used cherry pie filling instead of the mixture posted - delicious. Will try apple filling next time. As I had only 2/3c. sour cream, I made up the 1c. with some cottage cheese which I beat until smooth. I can't see that it made any difference at all. We had one of the 3 pieces for brunch; froze the other 2. I think I'll halve the recipe next time - unless it freezes really well, or I have lots of company, I don't see the point in making up 3 pieces at one time. The beauty of a Danish is when it's fresh. And I didn't bother with any walnuts.

Oatmeal Chip Cookies

Excellent cookie. I doubled the recipe, but using only 3 large eggs. I beat the butter and sugars till the mixture was really creamy. Adding the dry ingredients resulted in a perfect texture for baking. I used raisins instead of choc chips. The doubled recipe yielded 146 nice-sized cookies. I had to raise the temp to 375f and bake for 15 minutes - crispy on the outside and tender inside. Will be making these cookies again. Thanks for an excellent recipe.

Green Tomato Raspberry Jam

This is a fantastic recipe. I followed the recipe pretty closely except for reducing the sugar a little. Put tomatoes(the egg-sized) through the food processor, yielding about 6c. I added 5 c. sugar to that. After cooking the requisite time, I added a partial packet of liquid pectin I had sitting in the fridge (I wanted to get rid of it and knew it wouldn't hurt the recipe) along with the jello - followed the rest of the instructions. Great consistency, great color, excellent flavor. Raspberry jam is my favorite jam and in my opinion, and not to take away from the results here, this jam is more "reminiscent" of Raspberry Jam rather than seeming to be the real thing. However, I will use this recipe any time I can get my hands on more green tomatoes. This jam is certainly cheaper than making real raspberry jam, which only adds to the value of this recipe. Oh, I got 7-3/4 250ml jars of jam. Not bad for 4 c. sugar and 2 small packets of jello. I processed the jars in the canner 10 minutes. Thanks for such a simple recipe.

Vinegar Cookies

Delicious cookie. Based on other reviews I added extra flour, almost a cup for a double batch. I had no problem lifting the baked cookies from the pan, which I had forgotten to lightly grease. With that much butter in them you shouldn't have to grease the pan anyway. I used pecans rather than walnuts from personal preference. I found I had to raise the heat to 350 to get them to cook in 20 minutes. I got 8dz out of my double batch! They're going into a bake sale tomorrow. The only bad thing about these cookies is the name;-) it could put people off. UPDATE: 2 wks later my husband is till raving about these cookies - he loves 'em.

Pickled Beets

This is an excellent recipe - However....1. the recipe doesn't specify jar size. This is important because the larger the jar, the longer the required processing. 2. The recipe says to cook the beets about 15 minutes: it's more like 30 - 45 minutes. 3. Almost all sources today will say to process pickled beets 30 minutes, rather than the 10 in this recipe. Lastly, to those who would peel the beets before cooking - I would encourage you NOT to do so. Cooking them whole reduces the "bleeding" but they're so easy and quick to peel after cooking, and less waste. It may seem that given my comments above that 4 stars is overrating the recipe but I do like the simple nature of Sharon Howard's farmer's wife's recipe and will continue to use it in future whenever I can beets with the changes I've noted

Coconut Parfaits

My husband really enjoyed this dessert. I thought the flavor was quite nice but didn't so much enjoy the texture of the coconut in the cream. If I make this again, I may grind the coconut up to a finer texture that more suits this dessert. By the way, I don't understand the grainy/gritty comments at all.

Cooky Cookies

Excellent cookies. I used pecans in place of walnuts, which I dislike but followed the recipe as written. I'll be making these cookies again. The recipe says 30 servings which I interpret to mean 30 cookies - I got 10dz small and medium size cookies. PS. One disturbing trend by many reviewers is to criticize a recipe when they've made all sorts of changes - in effect, they are rating a different recipe but blaming the original recipe poster. If one of the recipe's ingredients is oil, which you replace with applesauce, it's likely going to change the context of the cookie: is it fair to blame the recipe? I don't think so. A rating is only fair if you have made the dish according to the recipe.

Simple White Cake

Probably one of the best cakes I've ever made. I made it exactly as per the recipe, except that I doubled the recipe for a large group. So moist and so delicious. Got raves. Several of our guests went back for seconds.

White Frosting

I doubt I'll ever use this recipe again. I couldn't get the butter to mix in properly. A long time beating with a stand mixer whisk and there were still bits of butter in the icing. I added some more granulated sugar and then some icing sugar, which helped some. Even with the extra sugars it's still not overly sweet. Too much bother, took away from the "quick" in the description. Update: I'm having to upgrade the rating due to raves from our guests. I used this icing on a "Simple White Cake" and several people went back for seconds and I even got a request for the recipe. So, I might use it again but will have to change the mixing somehow.

Apple Glazed Pork Tenderloin

Excellent recipe. I made it as written except that in trying to get everything done quickly, I added the wine to the apple jelly instead of the pan. So I put the balsamic vinegar in the pan and added the jelly/wine mixture to get all the brown bits up. I served it with fresh picked green beans and rice. One reviewer said she/he got tired of the balsamic vinegar taste but I have to say the whole mixture melds so well I was never aware of the specific taste. I'll do this up again for company anytime.

Danish Oatmeal Cookies

Delicious, easy and quick to make. Had no problem with too much spreading even without refrigerating the dough. Followed the recipe exactly. While I agree the icing sugar sprinkled on the baked cookies doesn't add much to the taste, I think it adds to the look and distinction of the cookie. I'll be making these again. Thanks for the recipe.

To Die For Blueberry Muffins

with 5060 reviews already posted, this recipe hardly needs another, however...This is a great recipe. And versatile. The recipe says it makes 8, and as I wanted 24, I tripled the recipe...I got 33 good sized muffins. Next time, doubling will be plenty. I would suggest not over-filling the muffin cups as they spread out over the pan, making it harder to get them out of the muffin pan intact - especially if you aaa the topping. I had no blueberries so I substituted frozen cranberries. No problem with berries sinking. My only mistake was in chopping the berries because they were so big. Next time I'll leave them whole for more flavor. Also, this muffin really doesn't need the extra sugar via the topping. I made half with, and half without, topping and my sweet-tooth husband agreed: the muffins are good enough without.

Italian Grilled Cheese Sandwiches

5-star cheese sandwich. I made it in the frying pan as I didn't want to turn the oven on. Second time I made it I took another reviewer's suggestion to put a little thick homemade marinara sauce inside the sandwich; made it with cheddar cheese bread, used cheddar cheese, with a little sprinkle of Parmesan (had no mozzarella). Grrrreat! Will make it this way in future. Won't ever be able to go back to an ordinary grilled cheese.
