About this Cook
I live in Wisconsin with my husband and two daughters, Emma (5/24/02) and Cami (2/17/05). I love to bake and cook but in the past few years I haven't had much time to bake. Now that my girls are older they are eager to help and I'm getting back into it. I'm really enjoying finding new recipes to try.
My favorite things to cook
My favorite meals are Mexican and Italian. I am not much of a red meat eater, so I like to try things with chicken. As far as my baking favorites, I like cookies, cake and bread.
My favorite family cooking traditions
My family has an apple orchard (2nd and 3rd generation). So when apple season comes, I love trying new apple recipes I find on here. Also Christmas cookies are a big family tradition. I can remember watching my great-grandmother bake cookies. We weren't allowed to help just watch and sample. My mother is a good baker, she's the one that taught me. Now I teach her things. :)
My cooking triumphs
I like to mix recipes around by exchanging one ingredient for an other. It works most of the time. I also like to try to "lighten up" recipes. But I love making yeast breads. I know it's usually a challenge for most people (including my father) but I guess I've been doing it for so long it doesn't bother me.
My cooking tragedies
Not reading recipes all the way through before starting. I do this so often that I have gotten pretty good at fixing my mistakes. It kind of goes back to my triumphs (above).

Apple Crumble Pie
Easy and delicious pie. I liked that the real taste of the apples comes through and is not masked by a lot of sugar and cinnamon, but is still plenty sweet. I used half white and half brown sugar when topping the apples. I also liked that this pie wasn't runny causing the bottom crust to get soggy. The baking time was pefect to bake the apples and the bottom crust throughly without burning the topping. I used 5 cups of Jonagolds and have to say this is one of the best apple pies I have ever made.

Apple Cake IV
This recipe is delicious. I picked it because of the 5 star rating and the rave reviews. It turned out pefect and very rustic looking with the sugar/cinnamon topping. I used my stand mixer to beat the eggs and sugar, 15 minutes on high is just perfect for drowning out the kids. It was also perfect for me to peel and slice my apples. I used 4 very large Jonagolds. I used the full amount of sugar but cut the oil in half and used 1/2 cup of applesauce. The cake was perfectly moist without being too heavy. I do have to agree with another reviewer to be sure to test the center with a toothpick. I started with 50 minutes and ended up baking it the full 60 minutes. I definately will make this again. Thanks for the recipe!

Caramel Frosting I
Excellent! Very easy to make and it tastes sooooo good. I wanted to make a pourable frosting so I only added the first 1/2 cup of powdered sugar. I also had to add some extra milk because after it cooled a bit it turned into a big glob. I put it on a apple bundt cake, a perfect combination. Thanks for the recipe. I definately will be using this again on many different things.
