Scones

These scones are wonderful. I make a big batch on Sunday morning then the family & I have them with coffee for the rest of the week. These honestly taste as good as the scones I would pay $3 for at my neighborhood coffee shop.

Jen's Fresh and Spicy Salsa

Wow, I will NEVER buy salsa again! This was EASILY the best salsa I have had in my life! I did make a few changes to suit my taste, however: I used 4 cloves fresh garlic, omitted the salt, & used 1 whole jalapeno & didnt bother seeding it. I also used 1/3 of a green & 1/3 of a yellow bell pepper. Great base & it has sooo many possibilites!

Homefried Potatoes with Garlic and Bacon

Absolutely fantastic! My family loves this recipe & we will NEVER have the frozen ore ida potatoes obrien again! very easy to make even though I made a few changes: I added a few cloves of fresh garlic, also used 1/4 of a red onion & 1/4 of a yellow onion. also added 1/4 of a red & 1/4 of a green bell pepper. Fabulous!

Skillet Fried Corn

Really yummy! I made a few changes however to suit my family's taste buds:I used applewood smoked bacon insted & drained the fat. I also used 1/2 green bell pepper & 1/2 red pepper & also added a pinch of crushed red pepper as well. Absolutely added to the rotation!

Famous Chicken Adobo

This is absolute perfection! I only made one change, & that was because I didnt have the vinegar called for in the recipe. I added garlic wine vinegar & it was great. Even my kids love it & ask for it about once a week.

Rice Mix Meatballs

Ehhh...it was okay. My kids loooved it. My husband & myself however DID NOT. For some reason, the rice inside of the meatballs never really reached the correct level of doneness. However, sine the kids thought it was great I will more than likely have to make it again.

Pork Steaks

Absolute perfection! Based on some of the other reviews & my own intuition I changed a few things: I doubled the soy sauce/butter & dredged the pork steak in flour prior to adding. I also waited until the last few minutes before I added the garlic & onions. I also added some red, green & yellow bell peppers for color, as well as a smidge of crushed red & sesame oil & seeds as garnish when I plated it. It was great. My super-picky kids even asked for seconds!

WONDERFUL!!! The recipe was a complete success. One suggestion, however. SInce my hubby & I are diabetic, I tried w/splenda brown sugar & diet soda & it came out just as well as the lareger one I made for the non-diabetics at xmas dinner
