Quinoa with Chickpeas and Tomatoes
This is an excellent quinoa recipe! I have to say that I did make a few changes though. I used chicken broth in place of the water. I added the juice of two limes. In place of the 1/2 teaspoon parsley, I used about a half cup of cilantro. For a little extra seasoning, I added some Mrs. Dash. This recipe yields very well to many adaptations. Will make again. Soon, I hope!
