Apricot/Pineapple was my favorite jam of both my mother and myself. This I had to try. It is superb ! Since I didn't have dried apricots, I used two cans of them. I drained and saved the juice, then added enough orange juice (medication doesn't allow grapefruit juice) to make 1 1/2 cups. I then added only 1 cup of sugar. You MUST try this. Makes about 3-4 cups, and that isn't enough once people start eating it. Better buy extra bread. Superb with toast. I have to make English Muffins tomorrow, to put the icing on the cake.
I made this again (2nd. time) this time with dried apricots. Made no difference in my opinion I used 1/2 cup BROWN sugar and 1/2 cup white sugar. You can judge if it is sweet enough. If you wish, add more sugar. Again, I used 1/2 cup orange juice. Just excellent. To soften apricots I used about 1 1/2 cups water. The more I read of this recipie, you cannot mess it up. Add the kitchen sink.
