Apricot Pineapple Jam

Apricot/Pineapple was my favorite jam of both my mother and myself. This I had to try. It is superb ! Since I didn't have dried apricots, I used two cans of them. I drained and saved the juice, then added enough orange juice (medication doesn't allow grapefruit juice) to make 1 1/2 cups. I then added only 1 cup of sugar. You MUST try this. Makes about 3-4 cups, and that isn't enough once people start eating it. Better buy extra bread. Superb with toast. I have to make English Muffins tomorrow, to put the icing on the cake. I made this again (2nd. time) this time with dried apricots. Made no difference in my opinion I used 1/2 cup BROWN sugar and 1/2 cup white sugar. You can judge if it is sweet enough. If you wish, add more sugar. Again, I used 1/2 cup orange juice. Just excellent. To soften apricots I used about 1 1/2 cups water. The more I read of this recipie, you cannot mess it up. Add the kitchen sink.

Peanut Butter Cookies with Chocolate Chunks

Excellent, but was afraid to make it exactly as indicated. I added extra oats and extra flour. Guessing, I would think about a total of 1 cup oats and 1 extra cup flour. They are terrific and done in 12 minutes. Excellent. (Next time I'll add the chocolate chips) DEFINITELY a re-do. This made 40 cookies.

Crisp Little Lemon Cookies

Followed recipe exactly. Excellent. Amazed me. Love to do with little kids helping. No mixer needed. Must make again. Although I have not tried it, I am sure this can work with other flavors of cake mix.

Oatmeal Banana Nut Bread

Great Recipe ! ! ! Best Banana Nut recipe I have. Will definitely do these again. Made seveal cupcakes and baked them about 23 minutes. I would definitely recommend this.

English Muffins

I now have made these muffins twice. Before the end of this week, it will be again. Because I love making bread with much experience, I've made some changes. SOME CHANGES I'VE MADE. I did NOT roll out and then cut with circle. I rolled them into a log and cut with a knife or pastry cutter. 18 slices perfect size. You can press into shape once cut. Easier to get into a log if get a log and cut in half. Then cut into 9 equal pieces. Add a good TABLESPOON Salt instead of the teaspoon in the recipe. Salt is the only ingredient that gives bread its taste. Also, I used NO Cornmeal. Instead I have a pancake eletric grill. Once formed, I place them directly on grill, let rise 1 hour then put on 11 minutes 1st side on 300 F. 10 minutes 2nd. side. I do spray the grill with food release. (Pam) The shortening, I used butter flavor Crisco. What a great thing ! THESE will be gone before breakfast which you made them for. Wow! Please enjoy!

Extreme Banana Nut Bread 'EBNB'

Upon reading the reviews of people, this is the one I chose to do. I used 4 bananas. This is the very BEST banana bread I ever made. One whole loaf was gone before I turned around. It is almost like Lays Potato chips....you can't eat just one. I chose also to use 1 cup sugar, and 1 cup brown sugar. Turned out to be a great combination.

Angie's Perfect Dinner Rolls

I am first of all a long time yeast dough maker and familiar how things should be done. These are excellent! Because I have a dough hook, I put all wet ingredients including the butter (I warmed it with the milk)...then the dry ingredients from smallest amounts to the largest. Dough is slightly wet, and it would not hurt to add a little extra flour, perhaps a 1/2 cup. I also egg washed (beaten egg with 1 TBL water)and brushed them. The rolls shined coming out of the oven. Will make these again. Urge you to give this a try.

Lemon Meringue Pie III

Blueberry Zucchini Bread

Followed recipe pretty close, may have added a little more Zucchini. I also added a cup of walnuts. Superb ! Definitely will make again. Made 2nd. time with other berries. Just as good, but liked the blueberry better. Walnuts really help a lot. Excellent recipe

The Best Oatmeal Cookies

I used walnuts instead of pecans, simply because I didn't have pecans. These are better than I expected. Saved to my recipe box. Highly recommend these.

Pillow-Soft Dinner Rolls

Superb ! Wish I could give more than a 5 rating. Needed about 1 hand of flour when forming them into a ball for 2nd. rising. I never tasted a better roll. ! ! ! Nothing like these 'old time' recipies. Strong suggestion, you double the water input. I use butter flavored Crisco as shorting, and so much nicer and lighter. Much nicer roll. Made several times already.

Classic Peanut Butter Cookies

Best Peanut Butter Cookie I ever made. Was very surprised by the size of the cookie, much larger than I expected. I now add 2 cups chocolate chips to the mixture. Superb !
