Balsamic Chicken with White Beans and Spinach

Enjoyed this but made a few changes. Cut back the balsamic vinegar to 1/4 cup and added 1 can of water (sauce was way too thick). Also, simmered the chicken in sauce for 30 min. before adding beans and spinach to enhance flavor.

Roquefort Pear Salad

Try this simple change to make this great salad even more interesting and delicious: Omit the avocado and onion and add 1/2 cup halved seedless red grapes. Awesome!

Strawberry Avocado Salad

Delicious! Also cut back on sugar, used baby spinach leaves and added 1/2 tsp. poppy seeds. Was a huge hit at Memorial Day bar-b-que.

Brown Rice

Also substituted 1 pkg. Lipton's French Onion Dry Soup Mix and cooked on stovetop following cooking time recommended by brown rice package (45 minutes). Came out so flavorful and delicious!

Coconut Pecan Chicken

Instead of yogurt, I marinated the chicken in coconut milk (13.5 oz. can Goya). Also substituted plain bread crumbs for panko and added 1/4 tsp. curry powder. This came out so moist and delicious!!

Sharon's Jamaican Fruit Cake

This was my first fruit cake and turned out great. I did soak the fruit in the red wine for 1 week and added 1/4 cup "spiced rum". Only problem was that I needed to use 3 pans not 2 and reduced cooking time to 1 hour. Delicious!

Walnut Apple Rice

Made this w/brown rice, adding the chopped apple and walnuts halfway through cooking time. Came out fantastic. Served w/Cranberry Chicken and it was the perfect side dish!!

Baked Tilapia

We loved this recipe. As suggested in other reviews, I cut the olive oil to 1/4 cup and sprayed the baking dish w/Pam. Also increased oregano to 1 tsp. and reduced butter to 2T. Excellent dish!
