Emerald Green Risotto

I am a vegetarian so I used vegetable broth and omitted the cheese and the risotto turned out great! I cannot wait to make it again! Thank you for the recipe!

Recipe was very good and very easy to make. I used rice milk instead of cow's milk along with no cheese and it tasted great. My husband isn't a big fan of eggs and he even liked it. Thanks for the recipe!

Gourmet Mushroom Risotto

Eggplant Parmesan I

Hummus III

Good recipe. I love garlic but this was overpowered with garlic. Next time I will save some of the Garbanzo bean juice to make the mixture less thick. I cut up some pita bread, spread a little olive oil on top, and put the bread in the oven until they were crispy…a nice way to have hummus.

Roasted Vegetables

My husband does not like sweet potatoes or squash (I know, they are both soo good!) So, I substituted with carrots and Idaho potatoes, used dry herbs, added some minced garlic, left out the peppers until there was 15 minutes left, and it turned out great! Next time I will add some green beans. Thanks for the recipe.

Vegan Lemon Poppy Scones

These were great! I used all the soy milk/water because my husband likes the scones more moist and we both laughed because they do look like giant cookies. Defiantly a keeper and a recipe to have fun with. Thanks.

Best Lactose Free Blueberry Muffins

These muffins were sooo yummy! Thank you for the recipe, this one is defiantly a keeper. I was nervous about using the lime juice but I kept to the recipe and I would not change a thing. Though, the directions did forget to mention to add the vanilla and lime. :) Also, in response to another reviewer, the writer of this recipe did say to check your margarine because some contain milk products. I used Earth’s Balance, which worked great.

Barbecue Ribs

I am a vegetarian but I made this for my family's Easter and they loved it! Even my Dad who is a picker eater loved it and wanted my Mom to make it for him a few weeks later. Make twice the amount of sauce and enjoy!
